Description

This comforting Chicken and Stuffing Casserole combines tender chicken pieces baked in a creamy mixture of cream of celery and chicken soups, topped with savory Stove Top chicken stuffing and chicken broth for moisture. The casserole is baked until bubbly and lightly browned, making for a satisfying meal perfect for family dinners or casual gatherings.

Ingredients

Chicken

  • 2 pounds chicken tenderloins, cut into bite-sized pieces
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Sauce

  • 10.5 ounce can cream of celery soup
  • 10.5 ounce can cream of chicken soup
  • 1/4 cup milk

Topping and Broth

  • 6 ounce box Stove Top chicken stuffing mix
  • 1 1/2 cups chicken broth

Garnish

  • Fresh or dried parsley (optional)

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 375°F. Spray an 11x7-inch baking dish with cooking spray and set aside to prevent sticking.
  2. Prepare Chicken: Cut 2 pounds of chicken tenderloins into bite-sized pieces and place them evenly in the prepared baking dish.
  3. Season Chicken: Toss the chicken pieces with 1/2 teaspoon kosher salt and 1/2 teaspoon black pepper to enhance the flavor.
  4. Mix Sauce: In a small bowl, whisk together the cream of celery soup, cream of chicken soup, and 1/4 cup milk until the mixture is smooth and well combined.
  5. Combine Chicken and Sauce: Pour the creamy soup mixture over the chicken pieces, spreading it evenly so all chicken is covered thoroughly.
  6. Add Stuffing: Evenly sprinkle the Stove Top chicken stuffing mix over the sauced chicken to form a flavorful crust on top.
  7. Moisten Stuffing: Pour 1 1/2 cups of chicken broth over the stuffing mix, ensuring that all the stuffing is moistened for a perfect texture once baked.
  8. Bake Covered: Cover the dish with foil and bake for 40-45 minutes. Check that the chicken reaches an internal temperature of 165°F to ensure it is cooked through.
  9. Bake Uncovered: Remove the foil and bake for an additional 5 minutes to lightly brown and crisp the top of the stuffing mix.
  10. Garnish and Serve: Garnish with fresh or dried parsley if desired. When serving, scoop up some of the flavorful gravy from the bottom and drizzle it over each portion for extra moisture and taste.
