Description

These Yellow Squash Fritters are crispy, savory pancakes made with fresh shredded yellow squash, onion, and a blend of spices. Pan-fried to golden perfection, they make for a delicious appetizer or side dish, garnished with fresh Italian parsley and perfect with your favorite dipping sauce.

Ingredients

Vegetables

  • 1 lb. yellow squash (washed, tops and bottoms removed)
  • 1 small yellow onion (peeled and halved)

Wet Ingredients

  • 1 large egg (slightly beaten)

Dry Ingredients & Spices

  • 1 ¼ teaspoons kosher salt
  • ¾ teaspoon black pepper
  • ¾ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon Italian seasoning
  • ½ teaspoon red chili flakes
  • ¾ cups unbleached all-purpose flour

Frying Fats

  • 2 tablespoons unsalted butter
  • 2 tablespoons oil

Garnish

  • 2 tablespoons chopped Italian parsley

Instructions

  1. Shred the vegetables: Over a large bowl lined with a clean towel, grate the yellow squash and onion using a box grater. Use the towel to squeeze out any excess moisture from the shredded vegetables, discarding the extracted water to ensure the fritters are not soggy.
  2. Mix the batter: Transfer the shredded squash and onion to the bowl and mix thoroughly with the beaten egg, kosher salt, black pepper, garlic powder, onion powder, Italian seasoning, and red chili flakes until everything is evenly coated.
  3. Add flour and rest: Stir in the flour until the mixture is well combined and holds together when pressed against the side of the bowl. Set the batter aside for 10 minutes to allow it to rest and thicken.
  4. Heat the skillet: Warm a large skillet over medium heat. Add the unsalted butter and oil, allowing the butter to melt completely and the fat mixture to get hot.
  5. Cook the fritters: Using a ¼ cup measure, scoop 3-4 portions of batter onto the skillet, flattening slightly. Cook each fritter for 3-4 minutes on each side until golden brown and crispy.
  6. Drain and keep warm: Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil. Keep them warm in a low oven while finishing the remaining batter.
  7. Serve: Garnish the fritters with chopped Italian parsley and serve immediately with your favorite dipping sauce.

Notes

  • Be sure to squeeze out excess moisture from the squash and onion to prevent watery fritters.
  • If you prefer a spicier fritter, increase the red chili flakes to taste.
  • Use a combination of butter and oil to achieve a nice golden crust without burning.
  • Fritters are best served immediately but can be kept warm in a low oven (around 200°F) before serving.
  • Try serving with sour cream, tzatziki, or a spicy mayo as dipping sauces for added flavor.
