Description

The White Christmas Mojito is a refreshing, tropical twist on the classic mojito cocktail, blending creamy coconut cream with white rum, fresh mint, lime juice, and a splash of seltzer. Finished with vibrant pomegranate seeds and mint garnish, this festive drink offers a delightful balance of creamy texture and citrusy brightness, perfect for holiday celebrations or any relaxing occasion.

Ingredients

Liquid Ingredients

  • 2 oz. coconut cream
  • 1 1/2 oz. white rum
  • 2 tbsp. fresh lime juice
  • Seltzer, for topping off

Fresh Ingredients

  • 12 fresh mint leaves, plus 1 sprig for serving
  • Pomegranate seeds, for serving

Other Ingredients

  • 1 tbsp. granulated sugar
  • Ice

Instructions

  1. Blend the cream and rum: In a blender, blend the coconut cream and white rum together until frothy. You can also use a handheld mixer if a blender isn’t available to achieve a creamy, airy texture.
  2. Muddle the mint mixture: In a Collins glass, add the fresh mint leaves, fresh lime juice, and granulated sugar. Use a muddler to gently crush the mint leaves to release their aroma and flavor, mixing them evenly with the lime and sugar.
  3. Assemble the drink: Fill the glass with ice cubes, then pour the cream and rum mixture over the ice. Top off the glass with seltzer to add a refreshing fizz and lighten the rich coconut flavor.
  4. Garnish and serve: Add a sprig of mint and a handful of pomegranate seeds on top for a festive look and added burst of flavor. Serve immediately and enjoy your White Christmas Mojito.

Notes

  • The coconut cream adds a rich, creamy texture that complements the traditional mojito ingredients, making this a unique variation.
  • Use fresh mint and fresh lime juice for the best flavor.
  • If you don't have a blender or handheld mixer, vigorous shaking in a cocktail shaker can also froth the cream and rum, though less thoroughly.
  • The pomegranate seeds add not only a festive touch but a subtle tartness that pairs well with the sweetness of the drink.
  • This recipe is for one serving; scale ingredients accordingly for multiple drinks.
