Description

Whipped Ricotta Avocado Crostini is a delightful appetizer featuring crispy toasted baguette slices topped with a creamy blend of whipped ricotta, ripe avocado, garlic, and lemon juice. Garnished with crunchy walnuts, sweet pomegranate seeds, and a drizzle of honey, this recipe offers a perfect balance of creamy, crunchy, tart, and sweet flavors. It’s an elegant yet simple dish that’s ready in under 30 minutes, ideal for entertaining or a flavorful snack.

Ingredients

Main Ingredients

  • 1 Baguette (sliced into 1-inch thick slices)
  • 2 Tablespoons Olive Oil
  • 2 Avocados (ripe)
  • 1 15-ounce Container Ricotta Cheese
  • 1 Teaspoon Sea Salt
  • 2 Tablespoons Lemon Juice
  • 2 Cloves Garlic
  • 1/4 Cup Crushed Walnuts
  • 1/3 Cup Pomegranate Seeds
  • 3 Tablespoons Honey

Instructions

  1. Preheat Oven: Preheat your oven to 350°F to prepare for toasting the crostini.
  2. Line Baking Sheet: Line a baking sheet with parchment paper to prevent sticking and allow easy cleanup.
  3. Slice Baguettes: Cut the baguette into approximately 1-inch thick slices and arrange them evenly on the prepared baking sheet.
  4. Brush Baguettes with Oil: Lightly brush the tops of the baguette slices with olive oil to help them crisp up and brown beautifully in the oven.
  5. Bake Crostinis: Bake the baguette slices for 8-10 minutes until golden brown and crispy. Remove from oven and set aside to cool slightly.
  6. Prepare Whipped Ricotta: While the crostinis bake, add the ripe avocados, ricotta cheese, sea salt, lemon juice, and garlic cloves to a food processor. Process for about 3 minutes until the mixture is smooth, creamy, and well combined.
  7. Season and Transfer: Taste the whipped ricotta mixture and adjust the salt and lemon juice if needed. Transfer the mixture into a piping bag fitted with your preferred piping tip for easy and neat application.
  8. Top Crostinis: Pipe the whipped ricotta mixture generously onto each toasted baguette slice until all the mixture is used.
  9. Garnish and Serve: Sprinkle each crostini with crushed walnuts and pomegranate seeds for crunch and color. Drizzle with honey to add sweetness and serve immediately for the best texture and flavor.

Notes

  • Use ripe avocados for a creamy and smooth whipped ricotta mixture.
  • If you don’t have a piping bag, you can spread the mixture using a butter knife or spoon.
  • Adjust honey drizzle according to your preferred sweetness level.
  • For extra flavor, toast the walnuts lightly before chopping.
  • These crostinis are best eaten fresh to maintain the crisp texture.
