Description

A quick and vibrant vegetable stir-fry loaded with crisp-tender carrots, broccoli, baby corn, mushrooms, and colorful bell peppers, tossed in a flavorful homemade sauce made with soy sauce, honey, ginger, and garlic. This easy 25-minute recipe is perfect for a healthy weeknight meal that can be customized to be vegetarian or gluten-free.

Ingredients

Sauce Ingredients

  • 1/4 cup chicken broth (or vegetable broth for vegetarian)
  • 3 Tbsp low-sodium soy sauce (use Tamari for gluten-free), or 2 Tbsp regular soy sauce
  • 1 tsp corn starch
  • 2 Tbsp honey
  • ¼ tsp hot sauce (optional, Frank's or Sriracha work great)

Vegetables

  • 1 large carrot (sliced)
  • 2 cups medium broccoli florets
  • 8 oz can baby corn spears (drained)
  • 8 oz mushrooms (white or brown) (sliced or quartered)
  • 1 whole pepper (red, yellow, or orange) (seeded and sliced)

Cooking Ingredients

  • 2 Tbsp cooking oil (extra light olive oil or canola)
  • 2 Tbsp unsalted butter
  • 3 garlic cloves (peeled and minced)
  • 2 tsp ginger (minced)

Instructions

  1. Make stir fry sauce: In a small bowl, combine the chicken or vegetable broth, soy sauce, corn starch, honey, and optional hot sauce. Stir thoroughly to incorporate the corn starch evenly, then set the sauce aside until ready to use.
  2. Sauté the vegetables: Heat a large non-stick skillet or wok over medium-high heat and add the cooking oil. When the oil is hot and shimmering, add the sliced carrots, broccoli florets, baby corn, mushrooms, and sliced bell pepper. Stir-fry the vegetables for about 3 minutes until they are just crisp-tender, ensuring not to overcook them to maintain their vibrant texture.
  3. Add aromatics: Reduce the heat to medium, then add the unsalted butter, minced garlic, and minced ginger to the skillet. Stir constantly for 30 to 60 seconds until the garlic and ginger become fragrant, infusing the vegetables with flavor.
  4. Add the stir-fry sauce: Give the prepared sauce a quick stir if it has separated, then pour it over the vegetables. Lower the heat to medium-low and cook for an additional 3 to 4 minutes, stirring occasionally, until the sauce thickens and the vegetables reach your desired tenderness.

Notes

  • Use vegetable broth and tamari soy sauce to make this dish vegetarian and gluten-free.
  • Adjust the amount of hot sauce according to your preferred spice level.
  • For more protein, add tofu, chicken, or shrimp.
  • Ensure vegetables remain crisp for the best texture; avoid overcooking.
