Description

These Vegan Lasagna Roll Ups offer a fresh, healthy twist on traditional lasagna by using thinly sliced zucchini as the pasta substitute. Filled with creamy dairy-free ricotta and baked in rich marinara sauce, this dish is perfect for a quick, satisfying dinner that’s both dairy-free and gluten-free.

Ingredients

Vegetables

  • 3 medium sized zucchini

Sauces

  • 1 ½ cups marinara sauce

Dairy Alternatives

  • 1 ½ cups dairy-free ricotta

Optional

  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) to prepare it for baking the roll ups.
  2. Prepare the zucchini strips: Trim the ends from the zucchini and cut a small sliver lengthwise from one side so it lays flat on a cutting board. Using a vegetable peeler, shave the zucchini into long, thin strips about 1/8 inch thick, mimicking lasagna noodles.
  3. Assemble the roll ups: Spread 3/4 cup of marinara sauce evenly on the bottom of a 9 x 13 inch baking dish. Spoon about one heaping teaspoon of dairy-free ricotta onto each zucchini strip, then carefully roll each strip up. Place each roll seam-side down onto the marinara in the dish, filling the dish completely.
  4. Add sauce and herbs: Pour the remaining 3/4 cup marinara sauce over the top of the assembled zucchini roll ups. Optionally, sprinkle fresh herbs over the top for added flavor and presentation.
  5. Bake and serve: Bake the dish in the preheated oven for 25 minutes until heated through and flavors meld. Serve hot and enjoy your delicious vegan lasagna roll ups.

Notes

  • For best results, use medium-sized zucchinis to ensure the strips are long enough to roll properly.
  • Dairy-free ricotta can be store-bought or homemade using tofu or cashews.
  • Feel free to add fresh herbs like basil or oregano on top before baking for extra flavor.
  • This dish is naturally gluten-free and vegan, making it suitable for multiple dietary preferences.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven.
