Ingredients
Shortbread
- 1 cup almond flour
- 3 Tbsp pure maple syrup
Date Caramel
- 1 cup medjool dates (pit removed)
- Water, as needed (for blending)
Toasted Coconut
- 1 cup shredded coconut (toasted)
Dark Chocolate Layer
- 3/4 cup vegan or regular dark chocolate chips
- 1 tsp coconut oil
Instructions
- Preheat and Prepare Baking Sheet: Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and ensure even baking.
- Make Shortbread Dough: In a medium bowl, combine the almond flour and pure maple syrup until a smooth dough forms. Place the dough between two sheets of parchment paper and roll out evenly to about 1/4 inch thickness for an even cookie base.
- Cut Cookies: Use a circle cookie cutter or the top of a glass to cut out round cookies. Then, use a smaller cutter or a metal straw to punch out the center holes, creating the classic Samoa cookie shape.
- Bake Shortbread: Transfer the cut cookies to the prepared baking sheet and bake at 250°F for 25-30 minutes until set and lightly golden. (27 minutes is optimal.) Let them cool completely on a cooling rack.
- Prepare Date Caramel: Remove pits from dates and soak them in hot nearly boiling water for 10 minutes to soften. Drain and blend the dates in a food processor for 3-5 minutes, adding water one tablespoon at a time if needed until smooth and creamy.
- Toast Coconut: Toast the shredded coconut on the stovetop over medium heat or in the oven at 350°F for 3-5 minutes, stirring frequently to avoid burning. Allow to cool.
- Assemble Cookies with Caramel and Coconut: Spread a generous layer of date caramel onto each cooled shortbread cookie. Press the caramel-coated side into the toasted coconut to coat evenly. Alternatively, mix the toasted coconut into the caramel and spread onto cookies if preferred.
- Melt Chocolate: Melt the dark chocolate chips with coconut oil either in short 30-second bursts in the microwave, stirring between each, or over a double boiler until smooth.
- Dip and Decorate: Dip the bottom of each cookie into the melted chocolate, place on parchment-lined sheet, and drizzle more chocolate over the tops to mimic the iconic Samoa pattern.
- Set and Store: Place the decorated cookies in the freezer for 20 minutes to allow chocolate to set. Store cookies in the refrigerator or freezer to keep fresh.
Notes
- Use parchment paper between dough rolls for easy handling and even thickness.
- Re-roll leftover dough scraps gently to maximize cookie yield without cracking.
- If date caramel is too thick, add water or plant-based milk a tablespoon at a time while blending for smoothness.
- Use a metal straw or small cutter to create clean, even center holes in the cookies.
