Description

This Vegan Baked Dumplings recipe offers a flavorful and comforting meal featuring vegetable dumplings baked in a rich, aromatic coconut red curry sauce with fresh vegetables. It's an easy-to-make, vegan-friendly dish perfect for a cozy dinner, combining creamy coconut milk, spicy red curry paste, and vibrant veggies, finished with a crunchy chili onion oil garnish.

Ingredients

Sauce & Base

  • 1 (13.5 oz) can coconut milk
  • 1/4 cup hot water
  • 2 tablespoons red curry paste
  • 3 tablespoons Soyaki sauce
  • 3 cloves garlic, minced
  • 1/2 teaspoon sea salt

Vegetables

  • 1/2 cup red pepper, diced
  • 1/2 cup mushrooms, sliced
  • 2 cups kale, chopped small

Dumplings & Garnish

  • 1 (16-oz) package vegetable dumplings (frozen)
  • 1 tablespoon cilantro, chopped
  • 1 tablespoon green onions, chopped
  • 1 tablespoon crunchy chili onion oil

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) to prepare for baking the dumplings.
  2. Prepare Sauce Base: Pour the entire can of coconut milk into the bottom of a baking dish. Add 1/4 cup of hot water into the empty coconut milk can, swish it around to extract remaining coconut milk, then pour this water into the baking dish as well, ensuring no coconut milk is wasted.
  3. Mix Sauce Ingredients: Add 2 tablespoons of red curry paste, 3 tablespoons of Soyaki sauce, 3 cloves of minced garlic, and 1/2 teaspoon of sea salt to the baking dish. Whisk all ingredients together thoroughly until the sauce is uniform in color and texture.
  4. Add Vegetables: Incorporate about 2 to 3 cups of vegetables into the sauce. This recipe uses diced red pepper, sliced mushrooms, and chopped kale. Stir gently to combine the veggies evenly in the sauce.
  5. Arrange Dumplings: Place the frozen vegetable dumplings on top of the saucy vegetables in a single layer. Spoon a small amount of the curry sauce over the top of the dumplings to coat them lightly.
  6. Bake Covered: Cover the baking dish tightly with aluminum foil. Bake in the preheated oven at 400°F (204°C) for 20 to 25 minutes, or until the sauce is hot, bubbly, and the dumplings are cooked through.
  7. Garnish and Serve: Remove from the oven and discard the foil. Drizzle crunchy chili onion oil evenly over the top. Garnish with fresh chopped cilantro and green onions. Serve hot, either alone or over cooked rice or rice noodles for a complete meal.

Notes

  • Using frozen vegetable dumplings makes this dish quick and convenient.
  • You can customize the vegetables based on your preference or availability.
  • For a gluten-free option, ensure the dumplings and Soyaki sauce are gluten-free.
  • The crunchy chili onion oil adds texture and a spicy kick but can be omitted if you prefer less heat.
  • Serve with rice or rice noodles to make it a more filling meal.
