Description

This easy unstuffed cabbage roll casserole features ground beef, cabbage, garlic, and tomatoes for a comforting and kid-friendly weeknight meal. Despite the presence of cabbage, this dish is loved by kids and gets better with time, making it perfect for leftovers. Serve it alongside rice for a complete dinner.

Ingredients

Meat and Vegetables

  • 2 pounds ground beef
  • 1 large onion, chopped
  • 1 small head cabbage, chopped
  • 2 cloves garlic, minced

Tomato Base

  • 2 (14.5 ounce) cans diced tomatoes
  • 1 (8 ounce) can tomato sauce
  • ½ cup water

Seasonings

  • 2 teaspoons salt
  • 1 teaspoon ground black pepper

Instructions

  1. Prepare Ingredients: Gather all the ingredients needed for the recipe and have them ready.
  2. Brown the Beef and Onion: Heat a Dutch oven or large skillet over medium-high heat. Add the ground beef and chopped onion, cooking and stirring frequently until the beef is browned and crumbly, about 5 to 7 minutes. Drain and discard excess grease to keep the dish from becoming greasy.
  3. Add Remaining Ingredients: Stir in the chopped cabbage, diced tomatoes, tomato sauce, water, minced garlic, salt, and pepper. Mix well to combine all the flavors.
  4. Simmer: Bring the mixture to a boil. Then cover the Dutch oven, reduce the heat to low, and let it simmer for about 30 minutes or until the cabbage is tender and all flavors meld together.
  5. Serve: Once cooked, serve hot. This dish pairs well with rice and tastes even better the next day once the flavors have settled.

Notes

  • For a slightly sweeter taste, you can add a teaspoon of sugar when adding the tomatoes.
  • Leftovers can be refrigerated for up to 3 days and reheated well, allowing flavors to deepen.
  • Serve with cooked rice or crusty bread to make it a fuller meal.
  • You can customize seasoning by adding a pinch of red pepper flakes for some heat if desired.
  • Using a Dutch oven is preferred for even cooking, but a large heavy skillet will work as well.
