This Ube Milk Tea recipe blends the rich and creamy flavors of ube with classic black tea and chewy tapioca pearls. A delightful homemade twist on a favorite bubble tea drink, perfect for an afternoon treat or a refreshing beverage to share.
Ingredients
Tea Base
- 1 cup water
- 1 tsp black tea leaves or 2 teabags
Ube Milk Mixture
- 1 cup whole milk
- 1 tsp ube paste
Toppings and Sweeteners
- 1/3 cup black tapioca pearls (boba)
- 4 tbsp brown sugar syrup
- 1 cup ice cubes
- Optional: cream or whipped cream for topping
Instructions
- Step 1: Brew the Tea. Boil 1 cup of water and once it reaches a boil, switch off the heat. Add the black tea leaves or teabags to the hot water and cover to steep for about 3 minutes to extract optimal flavor. Pour the brewed tea into a cup and set aside to cool.
- Step 2: Prepare the Ube Milk. In a glass, add 1 cup of whole milk with 1 teaspoon of ube paste. Whisk vigorously for at least one minute until the ube paste is fully dissolved and the milk has a uniform purple color and flavor. Set aside.
- Step 3: Cook the Tapioca Pearls (Boba). Bring 3 cups of water to a boil, then add 1/3 cup of black tapioca pearls. Boil for 4-5 minutes until the pearls float to the surface. Continue cooking over medium heat for another 5-7 minutes. Remove from heat, cover, and let the pearls soak for 5 minutes. Drain and transfer the cooked pearls to a small bowl. Stir in 1 tablespoon of brown sugar syrup to prevent sticking.
- Step 4: Assemble the Ube Milk Tea. Distribute the cooked tapioca pearls evenly into two large glasses (or three smaller glasses). Add ice cubes as desired. Pour half a cup of brewed tea into each glass, followed by the prepared ube milk. Drizzle in brown sugar syrup to taste. Stir briskly with a boba straw. Optionally, add cream or top with whipped cream for extra richness.
- Step 5: Serve and Enjoy. Serve immediately for the best texture and flavor. Stir occasionally, sip through the straw, and enjoy the creamy chewy delight of homemade ube milk tea!
Notes
- Allow the brewed tea to cool before assembling the drink to prevent the ice from melting too quickly and diluting the flavors.
- Adjust the amount of brown sugar syrup to your preferred sweetness level.
- Whisking ube paste thoroughly in milk ensures even color and flavor distribution.
- Cooking times for tapioca pearls may vary by brand; follow package instructions if different from this recipe.
- For a vegan version, substitute whole milk with plant-based milk alternatives.
- Adding cream or whipped cream is optional and adds extra creaminess.
