Description

Traditional Turkish Boza is a fermented millet drink with a creamy texture and a subtle tang complemented by cinnamon and roasted chickpeas. This ancient recipe involves slow fermentation to develop fruity and slightly sour flavors, making it a unique and refreshing beverage with historic roots.

Ingredients

Ingredients

  • 170 g millet
  • 1.9 l water (plus extra to adjust consistency)
  • 100 g golden caster sugar (plus extra to taste)
  • Ground cinnamon (for serving)
  • Leblebi (roasted chickpeas, for serving)

Instructions

  1. Prepare Equipment and Millet: Wash a 2-liter glass jar or large container with hot soapy water, rinse well, and let air dry. In a large mixing bowl, add the millet and cover with water. Wash it thoroughly by moving around with your hands, then drain thoroughly.
  2. Cook Millet: Add the drained millet to a large pan along with 1.5 liters of water. Bring it to a boil, then reduce the heat and simmer with the lid slightly ajar for 1 hour. Stir 2-3 times during cooking to prevent sticking. The millet should become soft and porridge-like.
  3. Cool and Blend: Turn off the heat and let the millet cool to room temperature, about 2 hours. Then add the remaining 400 ml of fresh water. Use an immersion blender to blend the mixture until smooth.
  4. Strain Mixture: Strain the blended millet through a fine sieve into a large bowl using the back of a spoon to press and extract as much liquid as possible. Discard or save the leftover pulp for another use.
  5. Ferment: Transfer the thick, custard-like liquid into the prepared glass jar, seal it airtight, and leave it in a cool, dark place to ferment for 2-4 days. Stir daily to prevent spoilage and encourage consistent fermentation. Monitor the flavor development aiming for a fruity and slightly tangy profile. If fermentation is too rapid, refrigerate to slow it down.
  6. Sweeten and Adjust Consistency: Once fermented to your liking, transfer the Boza to a large bowl, whisk in 100 g sugar, and add 50-150 ml water to achieve a thick but pourable consistency.
  7. Refrigerate Before Serving: Divide the prepared Boza into jars and refrigerate for 24 hours to deepen flavors through slow fermentation.
  8. Serve: Pour Boza into glasses, dust with ground cinnamon, and garnish with a handful of roasted chickpeas (Leblebi).

Notes

  • Use 100-200 g of previously fermented Boza to jumpstart fermentation for your next batch, as is traditional in Turkey.
  • Store Boza refrigerated in an airtight container for 3-4 days.
  • Fermentation duration depends on ambient temperature; colder environments favor slower, balanced fermentation.
