Description

This comforting Turkey Pot Pie with Biscuits is a perfect way to use up leftover turkey. Featuring a creamy filling of turkey, peas, and carrots, topped with golden canned biscuits, it’s an easy and satisfying dinner that comes together in under an hour.

Ingredients

Filling

  • 3 tbsp butter
  • ½ cup chopped onion
  • 1 tsp garlic powder
  • 3 tbsp flour
  • 1 ¾ cups chicken stock
  • ½ cup half cream
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 2 ½ cups cooked turkey, chopped (leftover turkey works great)
  • 9oz frozen peas and carrots, thawed

Topping

  • 8 canned biscuits

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) to ensure it's ready for baking the pot pie once the filling is prepared.
  2. Cook Onions: In a large skillet over medium-high heat, melt the butter. Add the chopped onion and cook until tender and translucent, about 3-5 minutes, which builds a flavorful base for the filling.
  3. Add Flour: Sprinkle the flour over the cooked onions and stir well, coating the onions to form a roux that will thicken the filling.
  4. Add Liquids and Seasoning: Gradually pour in the chicken stock while stirring to avoid lumps. Then add the half cream, garlic powder, and dried thyme. Stir to combine all ingredients thoroughly.
  5. Simmer and Season: Bring the mixture to a gentle simmer. Season with salt and pepper according to your taste preference, ensuring the filling is well-flavored.
  6. Add Turkey and Vegetables: Stir in the chopped cooked turkey along with the thawed peas and carrots. Let the mixture simmer for about 3 minutes or until it thickens slightly and the flavors meld together.
  7. Prepare Baking Dish: Grease a 9-inch baking dish to prevent sticking, then transfer the turkey and vegetable filling into it, spreading evenly.
  8. Add Biscuits: Place six whole biscuits evenly on top of the filling. Cut the remaining two biscuits into smaller pieces to fill any gaps on the surface, creating an even biscuit layer.
  9. Bake: Bake in the preheated oven for 25-30 minutes until the biscuits are puffed up and golden brown on top.
  10. Serve: Remove from the oven and allow to cool slightly. Serve warm for a hearty and cozy meal.

Notes

  • Using leftover roast turkey makes this recipe quick and easy, but freshly cooked turkey works well too.
  • You can substitute frozen mixed vegetables if peas and carrots are unavailable.
  • For a richer filling, you can substitute half cream with heavy cream or whole milk depending on preference.
  • To save time, premade biscuit dough makes topping this pot pie effortless.
  • This recipe can be doubled to serve a larger group by using a bigger baking dish and additional biscuits.
