Description

These savory Tuna Waffles are a delightful twist on traditional waffles, combining wild albacore tuna, eggs, and mozzarella cheese into a crispy and flavorful dish. Perfect for brunch or a light meal, they are served warm with a fresh topping of cherry tomatoes and avocado, optionally enhanced with balsamic vinegar for a touch of tang.

Ingredients

Main Ingredients

  • 2 (4.6-oz.) cans Blue Harbor Fish Co.® Wild Albacore Tuna in Water with No Added Salt
  • 3 large eggs
  • 1 cup shredded part-skim mozzarella cheese
  • 1 tbsp mayonnaise
  • 1/2 tbsp lemon juice
  • 2 green onions, finely chopped
  • 1/8 tsp salt

Topping Ingredients

  • 1 1/2 cups halved cherry tomatoes
  • 1 avocado, peeled, pitted, and chopped
  • 1 1/2 tbsp balsamic vinegar (optional)

Instructions

  1. Preheat the oven: Set your oven to 250°F (120°C) to keep the waffles warm and crispy after cooking.
  2. Prepare the tuna: Open the cans of tuna and transfer the tuna into a large mixing bowl. Use a fork to break the tuna into smaller pieces for an even texture.
  3. Mix the batter: Crack the eggs into the bowl with the tuna and whisk together thoroughly with the fork. Add shredded mozzarella cheese, mayonnaise, lemon juice, finely chopped green onions, and salt. Stir all ingredients together until fully combined.
  4. Cook the waffles: Preheat a mini waffle iron. When hot, pour about 1/4 cup of the tuna batter into the waffle iron, close the lid, and cook for 3-4 minutes until the waffles are cooked through and golden brown. Repeat this process for the remaining batter.
  5. Keep waffles warm and crisp: Arrange all cooked waffles in a single layer on a baking sheet. Place the sheet in the preheated oven for 5 minutes to evenly warm and crisp the waffles.
  6. Prepare the topping: While the waffles warm, mix the halved cherry tomatoes, chopped avocado, and balsamic vinegar (if using) in a small bowl to create a fresh, flavorful topping.
  7. Serve: Remove the waffles from the oven and serve immediately topped with the tomato and avocado mixture for a delicious, savory meal.

Notes

  • You can adjust the seasoning with additional salt or lemon juice to taste.
  • For a dairy-free version, substitute mozzarella cheese with a plant-based alternative or omit it entirely.
  • The balsamic vinegar is optional but adds a nice acidity to balance the richness of the waffles.
  • Ensure the mini waffle iron is well-heated before adding batter for best texture and to avoid sticking.
