Description

This quick and easy Tortilla Pizza recipe makes a delicious snack or light meal using simple ingredients like flour tortillas, pizza sauce, mozzarella, and pepperoni. Ready in just 12 minutes, it’s perfect for when you want a crispy, cheesy pizza without the wait.

Ingredients

Base

  • 2 (8-inch) flour tortillas

Sauce

  • 3 tablespoons pizza sauce

Cheeses

  • 1 cup shredded mozzarella cheese
  • 2 tablespoons finely grated parmesan cheese

Toppings

  • 2 oz sliced pepperoni
  • 1/2 teaspoon dried oregano

Instructions

  1. Prep: Preheat your oven to 400ºF (200ºC) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Arrange Tortillas: Lay the two flour tortillas flat on the prepared baking sheet, ensuring they do not overlap.
  3. Spread Sauce: Evenly spread 1 1/2 tablespoons of pizza sauce on each tortilla, leaving a small border near the edges to mimic a traditional pizza crust.
  4. Add Mozzarella: Sprinkle 1/2 cup of shredded mozzarella cheese on top of each sauced tortilla, distributing it evenly to cover most of the surface.
  5. Add Pepperoni: Divide the sliced pepperoni between the two tortillas, placing them evenly over the mozzarella.
  6. Sprinkle Parmesan and Oregano: Sprinkle the finely grated parmesan cheese and dried oregano evenly atop the pepperoni and mozzarella layers for extra flavor.
  7. Bake: Place the baking sheet in the oven and bake for 5-7 minutes, or until the cheese has melted and the edges of the tortillas are crisp and golden.
  8. Serve: Remove from the oven, let cool slightly, then slice and serve immediately for a crispy, cheesy mini pizza experience.

Notes

  • Use corn tortillas for a gluten-free alternative, but note the texture will be different.
  • Feel free to customize toppings with veggies like bell peppers, mushrooms, or olives.
  • If you prefer a crispier crust, bake the tortillas for 2-3 minutes before adding toppings.
  • To avoid sogginess, avoid adding too much sauce.
  • Leftover tortilla pizzas can be reheated in the oven or toaster oven to retain crispiness.
