Ingredients
For the Chicken
- 1 roaster chicken (about 4-5 pounds)
- 1/2 cup butter (softened)
- 2 tablespoons Italian Seasoning herb blend
- Salt and Pepper, to taste
- 2 tablespoons lemon juice
- 1 lemon, sliced
- 1 head garlic (divided)
- 1 onion (divided)
For Roasting Vegetables
- 1 head garlic (remaining from above)
- 1 onion (remaining from above), quartered
- 3 carrots, chopped
- Salt and Pepper, to taste
Instructions
- Preheat the oven: Set your oven to 400°F (200°C) to get it ready for roasting the chicken.
- Prepare the chicken: Remove the chicken from its packaging, rinse thoroughly with cold water, and pat dry using paper towels. Remove giblets and trim any excess fat.
- Optional brine: For enhanced flavor and juiciness, brine the chicken in a saltwater solution for 24 hours prior to cooking.
- Stuff the cavity: Place the quartered onion, half of the garlic head, and lemon slices inside the chicken’s cavity to infuse delicious aroma and flavor while roasting.
- Make herb butter: Combine the softened butter with the Italian seasoning and lemon juice. Gently loosen the skin over the breasts and rub the herb butter mixture liberally underneath the skin.
- Season the outside: Sprinkle salt and pepper generously over the entire outer surface of the chicken. Optionally, truss the legs using baker’s twine to ensure even cooking.
- Prepare roasting pan: In a roasting pan, add the remaining garlic cloves, onion quarters, and chopped carrots. Season these vegetables with salt and pepper.
- Roast the chicken: Place the seasoned chicken atop the bed of vegetables in the roasting pan. Put the pan in the preheated oven.
- Cook thoroughly: Roast the chicken for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (75°C) measured at the thickest part of the thigh. The skin should be crisp and golden brown.
- Baste frequently (optional): For an even more flavorful and golden skin, baste the chicken occasionally with its pan juices during roasting.
- Rest and serve: Once cooked, remove the chicken from the oven and let it rest for 10–15 minutes before carving to allow juices to redistribute for moist, tender meat.
Notes
- Brining the chicken the day before greatly enhances moisture and flavor.
- Using softened butter helps the herb mixture spread easily under the skin.
- Trussing the chicken legs helps maintain shape and ensures even cooking.
- Basting is optional but recommended for a more flavorful, crisp skin.
- Use a meat thermometer to guarantee the chicken has reached a safe internal temperature of 165°F.
- Let the roast chicken rest before carving to keep it juicy.
