Description

Tahdig is a traditional Iranian dish known for its irresistibly crispy golden crust of saffron-infused rice. This recipe guides you through making perfectly parboiled Basmati rice layered with a vibrant yogurt and saffron mixture, then steamed to create that signature crunchy bottom layer, resulting in a fragrant, flavorful Persian delicacy perfect for special occasions or everyday meals.

Ingredients

Rice and Saffron

  • ¼ tsp Saffron threads
  • 3 Ice cubes
  • 2 cups Basmati rice (360 grams)
  • 1 tbsp Kosher salt (15 grams)

Yogurt Saffron Mixture

  • ¼ cup Yogurt (Full Fat or Greek Style) (60 grams)
  • 2 tbsp Vegetable oil (30 ml)

Topping

  • 3 tbsp Salted butter (42 grams)

Instructions

  1. Saffron Infusion: Crush the saffron threads gently using your fingers or the back of a spoon, then add 3 ice cubes to the saffron in a small bowl. Let the ice cubes melt slowly to create a rich saffron infusion.
  2. Rinse the Rice: Rinse the Basmati rice thoroughly 3 to 4 times under cold water until the water runs clear, removing excess starch for fluffy grains.
  3. Soak the Rice: Soak the rinsed rice in about 6 cups of fresh water for 30 minutes using the same pot you plan to boil in. This helps hydrate the grains evenly.
  4. Parboil the Rice: Add 1 tablespoon of kosher salt to the soaking water, then bring it to a boil over high heat. Once boiling, reduce heat to medium-high and cook the rice for 6 to 8 minutes until just al dente—grains should be tender but still firm in the center.
  5. Drain and Rinse Rice: Drain the parboiled rice using a fine-mesh sieve and rinse under cold water to halt the cooking process and remove excess starch.
  6. Prepare Yogurt Saffron Mixture: In a medium bowl, combine the yogurt, saffron infusion, and vegetable oil, stirring gently to blend the flavors.
  7. Mix Rice with Yogurt Saffron: Carefully fold half of the drained rice into the yogurt saffron mixture using a spatula, being gentle to avoid breaking the grains.
  8. Layer the Pot: Select a nonstick pot with a tight-fitting lid. Spoon the saffron-colored rice mixture evenly into the bottom of the pot, pressing down gently to form the base layer.
  9. Add Remaining Rice: Layer the remaining plain parboiled rice on top of the saffron rice, leveling the surface without pressing firmly.
  10. Poke Holes: Use chopsticks or the handle of a wooden spoon to poke holes through the layers, allowing steam to circulate evenly.
  11. Add Butter: Dot the surface of the rice with small pieces of salted butter distributed evenly to enrich and crisp the crust.
  12. Cover and Steam: Wrap the pot lid with a clean kitchen towel and place it firmly on the pot to trap steam while preventing condensation from dripping back. Cook over medium heat until bubbling starts (about 5 minutes), then reduce heat to low and steam gently for 20–25 minutes to develop a crispy tahdig crust.

Notes

  • Using high-quality Basmati rice ensures fluffy grains that perfectly separate after cooking.
  • Do not overcook the rice during parboiling; it should remain slightly firm in the center.
  • Wrapping the lid with a towel helps absorb steam and prevents moisture from ruining the crisp crust.
  • The butter on top of the rice promotes golden browning and adds rich flavor.
  • Saffron infusion with melted ice cubes extracts maximum aroma and color.
  • This recipe yields a traditional Persian tahdig with a signature crispy bottom and aromatic saffron flavor.
