Description
A quick and flavorful Taco Tortellini dish combining seasoned ground beef, enchilada sauce, and cheesy tortellini for a comforting and easy weeknight meal.
Ingredients
Main Ingredients
- 1 pound ground beef
- 1/2 cup diced yellow onion
- 1 Tablespoon tomato paste (optional)
- 1 ounce low-sodium taco seasoning
- 2 (10 ounce) cans red enchilada sauce
- 1/4 cup fire-roasted tomatoes with green chiles (can add more, if desired)
- 19 ounce bag frozen cheese tortellini
- 1-2 cups shredded cheddar cheese
- 2 Tablespoons chopped cilantro (optional, for garnish)
Instructions
- Cook the beef and onion: In a skillet over medium heat, cook and crumble the ground beef along with the diced onion for about 6 minutes, or until the beef is no longer pink. Drain any excess grease and return the mixture to the skillet.
- Add seasonings: Stir in the tomato paste and low-sodium taco seasoning, cooking for 1 minute while mixing well to incorporate all flavors.
- Add sauces and simmer: Pour in both cans of red enchilada sauce and the 1/4 cup of fire-roasted tomatoes with green chiles. For extra heat, add more fire-roasted tomatoes gradually, tasting as you go. Bring the mixture to a simmer.
- Cook the tortellini: Stir in the frozen cheese tortellini, cover the skillet with a lid, and let it simmer on low to medium heat for 3-6 minutes. Stir occasionally to prevent sticking and ensure even cooking.
- Add cheese and melt: Sprinkle 1 to 2 cups of shredded cheddar cheese over the top of the dish. Cover again and remove from heat to allow the cheese to melt thoroughly.
- Garnish and serve: Garnish with freshly chopped cilantro if desired, then serve warm for a delicious and cheesy taco-inspired meal.
Notes
- You can adjust the spiciness by adding more or less fire-roasted tomatoes with green chiles.
- Drain excess grease after cooking the beef to keep the dish from becoming too oily.
- Covering the skillet when melting cheese helps achieve smooth, melted cheese topping.
- Use low-sodium taco seasoning and enchilada sauce to control salt content.
- Optional ingredients like tomato paste and cilantro enhance flavor but can be omitted based on preference.
