Ingredients
Rice
- 1 cup white rice (uncooked)
- 1 tbsp olive oil
Meat and Beans
- 1 lb lean ground beef
- ⅓ cup onion, chopped
- 1 small jalapeño (optional), chopped
- 3 garlic cloves, chopped
- 1 15oz can black beans, drained and rinsed
- 1 tbsp tomato paste
- ½ tsp salt
- 1 tsp chili powder
- ½ tsp paprika
- ½ tsp dried oregano
- ¼ cup chipotle peppers in adobo sauce
- 4 tbsp water
Garnishes
- 3 tbsp fresh cilantro (for guacamole and garnish)
- 1 avocado
- ⅓ cup salsa (for topping)
- ⅓ cup shredded cheese
Instructions
- Cook the Rice: Begin by cooking the rice according to the package instructions. Typically, white rice takes about 20 minutes to cook. Set aside once done.
- Brown the Meat: Heat olive oil in a skillet or nonstick pan over medium-high heat. Add the ground beef and cook until browned, about 5-8 minutes. Stir occasionally to break the meat apart.
- Add Aromatics and Spices: Once the meat is browned, add the chopped onion, jalapeño (if using), chopped garlic, tomato paste, salt, chili powder, paprika, and dried oregano. Mix well to combine and cook for another 2-3 minutes until fragrant and the onion softens.
- Prepare Chipotle Sauce: In a small blender, combine the chipotle peppers in adobo sauce with 4 tablespoons of water. Blend until smooth to form a smoky sauce.
- Simmer Meat Mixture: Stir the blended chipotle sauce and the drained black beans into the meat mixture. Let everything simmer together for about 2 minutes so the flavors meld.
- Make Guacamole: In a small bowl, mash the avocado with 1 tablespoon of chopped cilantro and a pinch of salt until creamy but still slightly chunky.
- Assemble Bowls: Divide the cooked rice among four bowls. Top each with the meat and bean mixture, a spoonful of guacamole, salsa, shredded cheese, and a sprinkle of fresh cilantro. Optional additions like sour cream and extra avocado slices can be added as desired. Serve immediately and enjoy!
Notes
- Use drained and rinsed canned black beans to reduce sodium and improve texture.
- Adjust the amount of jalapeño and chipotle peppers based on your heat preference.
- You can substitute ground turkey or chicken for lean ground beef for a lighter option.
- Leftover rice and meat mixture can be refrigerated for up to 3 days in airtight containers.
- Try adding other taco toppings like sour cream, diced tomatoes, or corn for extra flavor and texture.
