Description

This Sweet Potato Marshmallows Casserole is a classic, comforting side dish perfect for holiday dinners or cozy family meals. It features tender baked sweet potatoes mashed with sugar, butter, milk, eggs, and vanilla, then topped with mini marshmallows baked to golden perfection for a deliciously sweet and creamy treat.

Ingredients

Sweet Potato Mixture

  • 2 pounds fresh sweet potatoes
  • 6 tablespoons granulated sugar
  • 4 tablespoons (2 ounces) unsalted butter, melted
  • 1/4 cup milk
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt

Topping

  • 3 cups mini marshmallows

Instructions

  1. Preheat and Bake Sweet Potatoes: Preheat your oven to 400°F (204°C). Line a sheet pan with foil. Place the sweet potatoes on the pan and prick each with a fork. Bake for 40-50 minutes until tender; the skins will start to collapse when soft. Remove from the oven.
  2. Prepare Sweet Potato Mixture: Lower the oven temperature to 350°F (177°C). Let the sweet potatoes cool for at least 20 minutes. Meanwhile, whisk together sugar, melted butter, milk, vanilla extract, and salt in a bowl.
  3. Combine and Mash: Peel the cooled sweet potatoes and add the flesh to the bowl. Stir and mash completely to combine all ingredients. Finally, stir in the eggs until the mixture is smooth and uniform.
  4. Bake the Casserole: Spread the sweet potato mixture into a small 20-ounce (0.6L) baking dish. Bake for 20 minutes at 350°F to set the mixture.
  5. Add Marshmallow Topping: Remove the dish from the oven and evenly scatter mini marshmallows over the surface. Return to the oven and bake an additional 5-10 minutes, or until the marshmallows are toasted and lightly golden brown. Serve immediately for best taste.

Notes

  • If you prefer a smoother texture, use a potato ricer or food processor to mash the sweet potatoes.
  • For a dairy-free version, substitute milk with almond or oat milk and use dairy-free butter.
  • Be mindful not to over-bake marshmallows, as they can burn quickly once toasted.
  • This casserole can be prepared a day ahead; assemble fully and refrigerate, then bake just before serving.
  • Use fresh sweet potatoes for the best flavor; frozen or canned may alter texture and taste.
