  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 3/4 cup Unsalted butter (room temperature)
  • 1 cup White granulated sugar
  • 1 tsp Pure vanilla extract
  • 1 Large egg (room temperature)
  • 1 Egg yolk (room temperature)
  • 1/3 cup Christmas sprinkles (jimmies)

Cookie Dough Balls

  • 1 1/2 cups All-purpose flour
  • 1/2 tsp Salt
  • 1/2 cup Unsalted butter (room temperature)
  • 1 cup White granulated sugar
  • 1 tsp Pure vanilla extract
  • 3 TBSP Milk
  • 1/2 cup Christmas sprinkles (jimmies)

Cheesecake Filling

  • 24 oz Cream cheese (room temperature)
  • 3/4 cup White granulated sugar
  • 1/2 cup Sour cream (room temperature or Greek yogurt)
  • 1/4 cup Heavy cream (room temperature)
  • 1 tsp Pure vanilla extract
  • 4 Large eggs (room temperature)
  • 3/4 batch Cookie dough balls (from above)

White Chocolate Ganache

  • 1 cup White chocolate chips
  • 1/3 cup Heavy cream

Instructions

  1. Prepare Sugar Cookie Crust: Preheat your oven to 350℉. Spray a 9-inch springform pan with baking nonstick spray, then line the bottom with a parchment paper circle and spray it again. In a medium bowl, mix the flour, baking soda, and salt for the crust. Using a mixer, beat butter and sugar on high speed for 2 minutes. Add vanilla extract, egg, and egg yolk, mixing on medium until combined. Incorporate dry ingredients slowly, mixing on low until just combined, then fold in Christmas sprinkles.
  2. Form and Bake Crust: Press the prepared dough evenly across the bottom of the springform pan, forming the crust. Bake the crust for 25-30 minutes until it's golden on top. Meanwhile, bake 1 1/2 cups flour on a cookie sheet for 5 minutes and cool it for use in cookie dough balls.
  3. Prepare Cookie Dough Balls: In another bowl, mix flour (pre-baked and cooled) and salt. Beat butter and sugar on high speed for 2 minutes, then add vanilla and milk, mixing on medium until combined. Gradually add dry ingredients, mixing on low until just combined, then stir in Christmas sprinkles. Roll the dough into small balls (about dime to nickel size) on a wax paper-lined cookie sheet. Freeze these cookie dough balls until firm before use.
  4. Make Cheesecake Filling: Preheat oven to 325℉. Use a mixer to beat cream cheese and sugar on high speed for 2 minutes, scraping sides halfway through. Mix in sour cream, heavy cream, and vanilla until smooth without lumps. Add eggs one at a time, mixing on low speed just until combined. Gently fold in about 3/4 of the cookie dough balls with a spatula.
  5. Assemble and Bake Cheesecake: Pour the cheesecake batter over the baked sugar cookie crust. Prepare a water bath by placing the springform pan inside a larger cake pan or wrapping it in foil within a roasting pan, then add hot water halfway up the sides to prevent cracking and ensure even baking. Bake for 80-90 minutes until edges are set but the center still jiggles slightly.
  6. Cool and Chill: Turn off the oven, crack the door, and cool the cheesecake inside for 30 minutes to prevent cracks. Then let it cool completely on a rack. Wrap tightly in foil and chill in the refrigerator for at least 6 hours, preferably overnight.
  7. Prepare White Chocolate Ganache: Heat heavy cream until hot but not boiling; pour over white chocolate chips. Let sit for a minute, then stir gently until smooth and glossy. Pour the ganache evenly over the chilled cheesecake before serving.

Notes

  • Room temperature ingredients help ensure a smooth batter and even baking.
  • Baking the flour for cookie dough balls prevents a raw flour taste and adds structure.
  • Use a water bath for the cheesecake to avoid cracking and create a creamy texture.
  • Freezing cookie dough balls before adding them to the cheesecake keeps them intact during baking.
  • Allow the cheesecake to chill thoroughly for best texture and flavor.
  • The white chocolate ganache adds a rich, decadent topping but can be omitted if desired.
