Description

A refreshing and vibrant Strawberry Watermelon Salad tossed with fresh mint and basil, and dressed in a zesty honey-lime vinaigrette. Perfect as a light summer side dish or a healthy snack, combining sweet, tart, and herbal flavors in every bite.

Ingredients

Fruit

  • 1 pound strawberries, hulled and sliced
  • 1/2 seedless watermelon, cubed or scooped with a melon baller
  • 6 mint leaves, thinly sliced
  • 3 basil leaves, thinly sliced
  • 1/4 teaspoon sea salt

Honey-Lime Vinaigrette

  • 1/3 cup honey
  • 1 teaspoon lime zest
  • 1/4 cup fresh squeezed lime juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon fresh cracked black pepper

Instructions

  1. Prepare the Fruit: Use a knife or a melon baller to cut the watermelon into bite-sized pieces and place them in a large mixing bowl.
  2. Add Strawberries: Hull and slice the strawberries and add them to the bowl with the watermelon.
  3. Sprinkle Herbs: Thinly slice the mint and basil leaves and sprinkle them over the fruit mixture along with 1/4 teaspoon sea salt to enhance flavor.
  4. Make the Vinaigrette: In a small bowl, combine honey, lime zest, lime juice, and 1/4 teaspoon sea salt, mixing well to blend the flavors.
  5. Whisk in Olive Oil: Gradually whisk in the olive oil until the vinaigrette is smooth and emulsified.
  6. Finish and Serve: Drizzle half of the vinaigrette over the fruit mixture, gently toss to coat all the fruit evenly, and serve immediately for the freshest taste.

Notes

  • Use fresh, ripe strawberries and watermelon for the best flavor.
  • Adjust the honey amount in the vinaigrette to your desired sweetness.
  • This salad is best served immediately to prevent the fruit from becoming soggy.
  • Can be stored in the refrigerator for a few hours but may lose some texture.
  • Optional: garnish with additional fresh mint or basil leaves for presentation.
