Description

This Strawberry Semifreddo is a luscious Italian frozen dessert combining sweet, tangy strawberry puree with airy meringue and whipped cream. Lightly sweetened with honey and perfectly balanced with fresh lemon juice, this no-bake semifreddo features a fruity flavor and creamy texture that’s ideal for summer entertaining or a refreshing treat.

Ingredients

Strawberry Puree

  • 1 lb strawberries (fresh or frozen)
  • 1/4 cup pure honey
  • 1 tsp fresh lemon juice

Meringue

  • 3 egg whites, room temperature
  • 1/4 cup granulated sugar
  • 3 tbsp pure honey
  • pinch salt

Whipped Cream Mixture

  • 1 cup heavy whipping cream, cold
  • 1 tsp pure vanilla extract

Instructions

  1. Chill Equipment: One hour before starting, place a metal mixing bowl and whisk attachment in the fridge to thoroughly chill. This helps in achieving a stable meringue later.
  2. Prepare Strawberry Puree: In a medium saucepan, combine strawberries, 1/4 cup honey, and lemon juice. Bring to a gentle boil, then reduce to a simmer for 10 minutes. Remove from heat and use an immersion blender to puree until smooth with no large chunks. Measure out 1 cup of the puree and reserve the remainder for serving.
  3. Make the Meringue Base: Place egg whites, sugar, and 3 tbsp honey in a glass bowl over a pot of boiling water. Stir continuously until sugar dissolves completely. Remove from heat and let sit for about 10 minutes to slightly cool.
  4. Whip the Meringue: Retrieve the chilled mixing bowl and whisk attachment. Beat the egg white mixture on high speed until smooth, glossy meringue forms. Set aside.
  5. Whip the Cream: In another bowl, whip cold heavy cream and vanilla extract until stiff peaks form.
  6. Combine Mixtures: Gently fold one-third of the meringue into one-third of the whipped cream. Repeat folding with remaining meringue and cream. Then fold in the 1 cup of reserved strawberry puree until fully incorporated.
  7. Freeze the Semifreddo: Line a freezer-safe loaf pan with parchment paper, leaving edges extending out for easy removal. Pour the strawberry mixture into the pan and smooth the top. Freeze for 5 to 6 hours, or until firm.
  8. Serve: When ready, run a knife around the semifreddo edges. Lift it out using the parchment paper and place on a cutting board. Slice evenly with a sharp knife. Serve topped with the reserved strawberry sauce and fresh strawberry slices.

Notes

  • Use fresh strawberries for the best flavor, but frozen works well too.
  • Ensure the egg whites are at room temperature to maximize volume when whipped.
  • Chilling the mixing bowl and whisk makes whipping easier and quicker.
  • For safety, use pasteurized egg whites if you have concerns about raw eggs.
  • Store leftovers in the freezer covered to maintain freshness.
  • You can substitute honey with granulated sugar but honey adds a unique depth and moistness.
