Description

These Strawberry Pineapple Popsicles are a refreshing and naturally sweet frozen treat made from fresh pineapple, strawberries, lime, and mint. Perfect for a hot day, they combine tropical fruit flavors with a hint of minty freshness and are naturally sweetened with a touch of sugar and lime juice.

Ingredients

Fruits

  • 2 Cups pineapple (fresh, diced)
  • 2 Cups strawberries (fresh, diced)
  • 1 lime (juiced and zest grated)

Herbs and Sweeteners

  • ¼ Cup mint leaves (washed and roughly chopped, stems discarded)
  • 2 Tablespoons granulated sugar
  • 1 Tablespoon lime zest

Instructions

  1. Prepare pineapple: Cut the pineapple in half, peel it carefully to remove the skin, and dice the flesh into small pieces ready for processing.
  2. Prepare strawberries: Wash strawberries thoroughly, remove the leafy tops, and dice them into smaller pieces.
  3. Prepare lime and mint: Wash the lime, grate the zest, then cut it in half and extract the juice. Wash the mint leaves, discard the stems, and roughly chop the leaves.
  4. Make pineapple-mint purée: In a food processor, combine the diced pineapple and chopped mint leaves. Blend until smooth, adding a splash of water if necessary to aid processing. Transfer this mixture into a bowl.
  5. Make strawberry-lime purée: In the food processor, process the diced strawberries together with the lime zest and lime juice until smooth.
  6. Adjust sweetness: Taste each purée and, if needed, add granulated sugar gradually to each until the desired sweetness is reached, stirring until dissolved.
  7. Assemble popsicles: Pour the pineapple purée evenly into popsicle molds to create the first layer, then add the strawberry purée on top to fill the molds.
  8. Freeze: Place the molds in the freezer and freeze for at least 6 hours or until fully set before serving.

Notes

  • Adding a splash of water to the pineapple-mint mixture helps the food processor blend more easily.
  • Adjust the sugar amount to taste depending on the sweetness of your fresh fruit.
  • Using fresh mint leaves instead of dried enhances the bright, fresh flavor.
  • To remove popsicles easily, briefly run the mold under warm water to loosen them before pulling out.
  • For a vegan and dairy-free treat, these popsicles are suitable as is.
