Description
This classic Strawberry Pie features a flaky baked crust filled with a luscious strawberry mixture thickened to a jam-like consistency. Sweet, fresh strawberries macerated in sugar create a vibrant, naturally juicy filling that's gently thickened with cornstarch and chilled until set, perfect for a refreshing dessert.
Ingredients
Pie Base
- 1 prepared pie crust (baked as directed)
Filling
- 2 pounds strawberries (hulled and quartered)
- ¾ cup sugar
- ¾ cup strawberry juice (from macerated strawberries)
- ¼ cup water
- 3 tablespoons cornstarch
Instructions
- Prepare Pie Crust: Bake the prepared pie crust as directed on the package or use your favorite homemade pie crust recipe to bake a flaky base. Allow it to cool completely before filling.
- Macerate Strawberries: In a large bowl, combine the quartered strawberries and sugar. Let the mixture sit at room temperature for about 20 minutes, or until the strawberries soften, the sugar dissolves completely, and about ¾ cup of strawberry juice is released. Strain the liquid from the strawberries into a measuring cup and add water as needed to reach 1 cup of liquid. Set the strawberries aside.
- Prepare Thickened Sauce: Whisk the cornstarch into the liquid strawberry juice until fully dissolved. Transfer this mixture to a small pot along with about ¼ cup of the macerated strawberries. Use a potato masher or spatula to break the strawberries into smaller pieces. Heat over medium-high heat, stirring constantly, for 8–10 minutes until the sauce thickens to a jam-like consistency.
- Combine Filling and Assemble: Pour the thickened strawberry sauce over the remaining macerated strawberries and toss gently to combine. Spoon the strawberry mixture evenly into the cooled pie crust and flatten the berries gently with a spatula to distribute the filling evenly.
- Chill to Set: Refrigerate the assembled strawberry pie for at least 4 hours, or until the filling is completely set and chilled. Serve cold for best flavor and texture.
Notes
- Use fresh, ripe strawberries for the best flavor and natural sweetness.
- Ensure the pie crust is fully cooled to avoid melting the filling prematurely.
- For a glossier topping, you can brush the filling lightly with warmed apricot jam before chilling.
- This pie is best enjoyed within 2 days of preparation for optimal freshness.
- Use a potato masher or spatula to control the size of strawberry pieces in the filling to your preference.
