Description

A hearty and wholesome Spring Vegetable Soup featuring fresh seasonal vegetables, sautéed onions and celery, simmered in flavorful vegetable stock with thyme and a touch of black pepper. This easy-to-make soup includes tender potatoes, sweet peas, and optional pasta for added texture, perfect for a light lunch or cozy dinner.

Ingredients

Vegetables

  • 1 medium onion, finely minced (about 1 cup)
  • 1 large celery stalk, diced (about 1 cup)
  • 2 medium carrots, sliced (about 1 cup heaped)
  • 3 medium potatoes, diced (about 2 cups)
  • 5 ounces frozen peas (1 cup / 150 grams)

Other Ingredients

  • 1 tablespoon olive oil
  • 4 cups vegetable stock (1 liter)
  • ½ teaspoon dried thyme
  • Black pepper, to taste
  • Small pasta or noodles (optional, see notes)

Instructions

  1. Sauté Onion and Celery: In a medium pot, heat 1 tablespoon of olive oil over low-medium heat. Add the minced onion and diced celery, and sauté until the onion turns translucent, which should take about 3 minutes.
  2. Add Vegetables and Simmer: Add the sliced carrots, diced potatoes, vegetable stock, dried thyme, and a pinch of black pepper to the pot. Stir everything to combine well. Cover with a lid, increase the heat to bring the soup to a boil, then reduce to low heat and let it simmer for 15 minutes.
  3. Add Peas and Pasta, Continue Cooking: After 15 minutes, add the frozen peas and pasta if using. Continue cooking for an additional 5 minutes, or until the pasta and vegetables are soft and tender.
  4. Serve Warm: Once everything is cooked through, turn off the heat and ladle the soup into bowls. Enjoy it warm for a comforting meal.

Notes

  • Note 1: Olive oil adds a subtle richness but can be substituted with any other cooking oil.
  • Note 2: Finely mincing the onion ensures it cooks evenly and blends well in the soup.
  • Note 3: Frozen peas add a nice sweetness and vibrant color; fresh peas can be used as a substitute if available.
  • Note 4: Small pasta shapes like orzo, ditalini, or small elbows work well if you want to add a starch element to your soup.
  • Note 5: If using pasta, ensure to check package instructions for cooking times to avoid overcooking.
