Ingredients

Dry Ingredients

  • 2 1/4 cups (293g) all purpose flour
  • 2 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt

Cake Batter

  • 1/2 cup (112g) unsalted butter, room temperature
  • 1/2 cup vegetable oil
  • 1 1/2 cups (310g) sugar
  • 1 tbsp vanilla extract
  • 4 large eggs
  • 1 cup (240ml) buttermilk
  • 5 oz bittersweet chocolate (60% cacao), chopped
  • Black gel icing color
  • Red gel icing color

Frosting

  • 2 1/4 cups (504g) unsalted butter
  • 8 cups (920g) powdered sugar
  • 1 cup (114g) natural unsweetened cocoa powder
  • 2 tsp vanilla extract
  • 5-7 tbsp (75-105ml) water or cream
  • 1/4 tsp salt
  • Black gel icing color

Red Drip and Decoration

  • 4 oz red Wilton candy melts
  • 2 tbsp heavy whipping cream
  • Sprinkles for decoration (bone and eyeball themed)

Instructions

  1. Prepare Cake Pans and Oven: Grease the sides of three 8-inch cake pans and line the bottoms with parchment paper circles. Preheat the oven to 350°F (176°C).
  2. Mix Dry Ingredients: In a medium bowl, combine flour, baking powder, baking soda, and salt. Set aside.
  3. Cream Butter and Sugar: In a large mixing bowl, beat together unsalted butter, vegetable oil, sugar, and vanilla extract until light and fluffy, approximately 3-4 minutes, ensuring thorough creaming for best texture.
  4. Add Eggs: Incorporate eggs two at a time, mixing well after each addition. Scrape the sides of the bowl to make sure ingredients are fully combined.
  5. Combine Batter: Add half of the dry ingredients to the wet mixture and mix until combined. Pour in buttermilk and mix well. Add remaining dry ingredients and mix until smooth, being careful not to over mix.
  6. Divide and Color Batter: Split the batter evenly into two bowls using a food scale if available. To one bowl, add red gel icing color and gently fold to achieve a vibrant red. To the other bowl, melt the bittersweet chocolate and quickly add it with black gel icing color, folding gently to combine before the chocolate firms.
  7. Create Marble Effect: Alternate spoonfuls of red and chocolate batters into the prepared pans. Gently shake pans side to side to distribute and create a marble effect. Repeat for all three pans.
  8. Bake: Place pans in the oven and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool Cakes: Remove pans from oven and let sit 2-3 minutes before transferring cakes to wire racks to cool completely.
  10. Make Frosting: Beat unsalted butter in a large bowl until smooth. Add half of the powdered sugar and cocoa powder, mixing until smooth. Incorporate vanilla extract and 3 tablespoons water or cream. Add remaining powdered sugar and salt, mixing well. Adjust with additional water or cream to desired consistency. Add black gel icing color to tint frosting black.
  11. Level Cakes: Using a serrated knife, level the cake layers by removing any domed tops so each layer is flat for stacking.
  12. Assemble Cake: Place first cake layer on serving plate. Spread approximately 1 cup of chocolate buttercream evenly on top. Repeat layering with second cake and frosting, then top with final cake layer. Frost the outside of the cake evenly.
  13. Prepare Red Drip: Place candy melts in a bowl. Heat heavy whipping cream just to boiling, pour over candy melts, and let sit 2-3 minutes. Whisk until combined. If not melted fully, microwave in 15-second increments stirring until smooth. Let cool slightly.
  14. Decorate Cake: Drizzle red drip around the cake edges and on the top edges, avoiding the center. Finish by decorating with bone and eyeball sprinkles.
  15. Storage: Store cake in an airtight container. Best consumed within 3-4 days for optimal freshness.

Notes

  • Use parchment circles in pans to prevent sticking and ensure easy cake removal.
  • For dividing batter accurately, a kitchen scale is recommended for even layers.
  • Work quickly when folding melted chocolate into batter to prevent it from firming and making the batter difficult to handle.
  • To get the right drip consistency, allow the candy melts mixture to cool slightly before applying.
  • Bone and eyeball themed sprinkles enhance the spooky Halloween aesthetic and can be sourced from specialty baking stores or online.
  • The cake can be made a day in advance and refrigerated; bring to room temperature before serving.
