This Soul Warming French Onion Pot Roast is a comforting, slow-cooked beef dish infused with rich flavors from caramelized onions, garlic, beef broth, and aromatic herbs. The chuck roast is seared for tenderness, then slow-cooked or oven-braised to fall-apart perfection. Finished with a luscious onion gravy thickened with cornstarch, this hearty meal is perfect for a cozy gathering or family dinner.
Ingredients
Meat
- 1 (2 pound) chuck roast
For Searing and Sautéing
- 2 tablespoons butter
- a splash of oil (such as vegetable or canola)
- 3 cloves minced garlic
- 2 large onions, thinly sliced
For Braising
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon apple cider vinegar
- ½ teaspoon onion powder
- ½ teaspoon dried thyme
- 1 bay leaf
- ⅛ teaspoon celery seeds (crushed between fingers)
- 1 tablespoon sugar
For Thickening Gravy
- 2-3 tablespoons cornstarch
- ⅓ cup water (for mixing with cornstarch)
Instructions
- Season and Sear the Roast: Pat the chuck roast dry and season generously with salt and pepper on all sides. Heat a large skillet over medium-high heat or use your Dutch oven if cooking in the oven. Add butter and a splash of oil. Once the butter melts and crackles, add the roast and sear for 2-3 minutes per side until a deep brown crust forms. Remove the roast to a plate.
- Sauté Onions (Optional): Add more oil if needed and sauté the sliced onions for 3-4 minutes until they soften and begin to sweat, but not fully caramelized.
- Prepare for Slow Cooking: Place half of the onions in the slow cooker, then add minced garlic, beef broth, Worcestershire sauce, apple cider vinegar, onion powder, dried thyme, bay leaf, crushed celery seeds, sugar, and the seared chuck roast. Top with the remaining onions. Cover and cook on low for 6-8 hours until the roast is fall-apart tender.
- Finish Slow Cooker Gravy: Remove the roast and cover to keep warm. Mix 2 tablespoons of cornstarch with water to make a slurry and stir it into the slow cooker liquid. Cook for 5-7 minutes until thickened. Add more cornstarch slurry if necessary and cook an additional 5 minutes.
- Oven Braising Method: Preheat oven to 275ºF with a rack in the center. After sautéing onions, add the seared roast back into the Dutch oven with garlic, beef broth, Worcestershire sauce, apple cider vinegar, onion powder, dried thyme, bay leaf, celery seeds, and sugar. The liquid should reach halfway up the roast—add more broth if needed. Stir, cover with lid, and braise in the oven for 1 hour and 15 minutes. Check tenderness, then continue braising for another 1 to 1 ½ hours until easily pierced by a fork.
- Finish Oven Braising Gravy on Stovetop: Remove the roast to keep warm. Mix cornstarch and water as a slurry. Heat the Dutch oven over medium-high heat until liquid simmers. Stir in the cornstarch slurry and simmer until thickened. Add more slurry if needed, cooking 1-2 minutes more.
Notes
- Use a 2-pound chuck roast; for larger roasts adjust cooking time accordingly.
- Searing the meat prior to slow cooking or braising helps develop flavor and improves tenderness.
- Sautéing the onions before adding to the pot enhances their sweetness and richness but is optional.
- Braising at a low temperature longer results in a more tender and flavorful roast.
- Adjust the amount of beef broth to ensure the roast is partially submerged for even cooking.
- Thicken the gravy slowly with cornstarch slurry to desired consistency to avoid lumps.
