Ingredients
Nuget Oat Layer
- 1.5 cups oat flour
- ½ cup vanilla protein powder (we used Garden of Life Whey)
- ½ cup maple syrup
- ¼ cup melted coconut oil
Peanut Butter Caramel Layer
- ⅓ cup all-natural drippy peanut butter
- ½ cup maple syrup
- ¼ cup melted coconut oil
- ¾ cup chopped salted peanuts
Chocolate Layer
- 1.5 cups semi-sweet chocolate chips
- 1 tablespoon coconut oil
Instructions
- Prepare pan: Line an 8x8-inch pan with parchment paper and set aside to prevent sticking.
- Make Nuget oat layer: In a large bowl, combine oat flour, vanilla protein powder, maple syrup, and melted coconut oil. Mix vigorously until a thick dough forms.
- Press oat mixture: Transfer the dough to the lined pan and press firmly until evenly smoothed out to create the base layer.
- Prepare peanut butter caramel layer: In a bowl, mix peanut butter, maple syrup, and coconut oil until well combined. Fold in chopped salted peanuts carefully.
- Layer peanut butter caramel: Pour and evenly spread this mixture over the oat base layer. Smooth the top, then place the pan in the freezer for 1 hour to harden.
- Melt chocolate: In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 20-second increments, stirring after each, until fully melted and glossy.
- Prepare wire rack: Place a wire rack atop parchment paper and spray with nonstick cooking spray to catch excess chocolate.
- Slice bars: Once the oat and caramel layers have hardened, lift the parchment paper to remove the slab from the pan and slice into 12 bars.
- Coat with chocolate: Working quickly while bars are still frozen, dip each bar individually into the melted chocolate or spoon chocolate over it, ensuring full coverage. Let excess drip off and place on the wire rack. Optionally, sprinkle sea salt on top of each bar.
- Set chocolate: Transfer coated bars to a parchment-lined plate or baking sheet and return to the freezer to set the chocolate coating completely.
- Store bars: Once the chocolate has set, store the protein bars in a freezer-safe bag or container to maintain freshness.
