Description

This Slow Cooker Turtle Cake is a rich and moist chocolate fudge cake infused with coffee for depth of flavor, topped with luscious salted caramel and crunchy pecans. Using a slow cooker for baking ensures a tender texture without turning on the oven, making it a convenient and delicious dessert perfect for any occasion.

Ingredients

Cake

  • 13.25 oz. Chocolate Fudge Cake Mix (Betty Crocker recommended)
  • 1 cup coffee (used instead of water)
  • 1/2 cup vegetable or canola oil
  • 2 large eggs

Topping

  • 1 cup salted caramel sauce (found in the ice cream topping aisle)
  • 1 1/2 cups whole pecans (enough to cover the cake)

Instructions

  1. Prepare the slow cooker: Spray the slow cooker insert heavily with non-stick spray to prevent the cake from sticking during cooking.
  2. Mix the batter: In a large bowl, combine the chocolate fudge cake mix, coffee, eggs, and oil. Stir until smooth, allowing some lumps to remain as this is normal.
  3. Pour batter into slow cooker: Transfer the cake batter evenly into the prepared slow cooker insert.
  4. Cook the cake: Set the slow cooker on HIGH and cook for approximately 2 hours, or until the cake is set in the middle. Cooking time may vary depending on your slow cooker model.
  5. Cool the cake: Remove the slow cooker insert from the base and let the cake cool for at least one hour. This prevents the caramel topping from melting and disappearing into the cake.
  6. Add topping: Once cooled, spread the salted caramel sauce evenly over the cake and arrange the whole pecans on top as a crunchy garnish.
  7. Serve: Slice the cake, serve, and enjoy the combination of fudgy chocolate, caramel sweetness, and nutty pecans.

Notes

  • Using coffee instead of water enhances the chocolate flavor without adding bitterness.
  • Make sure to heavily spray the slow cooker to avoid sticking and for easier cleanup.
  • Allow the cake to cool fully before adding caramel to prevent it from melting and soaking in.
  • Cooking times may vary; check doneness by inserting a toothpick into the center, which should come out clean or with moist crumbs.
  • This cake can be stored covered in the refrigerator for 3-4 days.
