Ingredients
Chicken and Potatoes
- 2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
- 2 pounds Yukon Gold potatoes, quartered
Seasoning and Sauce
- 1 tablespoon dried Italian seasoning
- 1 (12-ounce) bottle parmesan garlic sauce
- ½ cup chicken broth
- 1 cup grated parmesan cheese
- Non-stick cooking spray, for the slow cooker
Garnish
- Fresh chopped parsley, optional
- Additional grated parmesan cheese, optional
Instructions
- Prepare the slow cooker: Spray the inside of the crockpot with non-stick cooking spray to prevent sticking and facilitate easy cleanup.
- Add potatoes: Place the quartered Yukon gold potatoes at the bottom of the slow cooker to form an even layer.
- Prepare and add chicken: Cut the boneless skinless chicken breasts into bite-sized pieces and add them on top of the potatoes. Sprinkle the dried Italian seasoning evenly over the chicken and potatoes for a balanced herb flavor.
- Add sauces and cheese: Pour the entire bottle of parmesan garlic sauce along with ½ cup of chicken broth over the chicken and potatoes. Sprinkle 1 cup of grated parmesan cheese evenly on top to enrich the dish with cheesy flavor.
- Combine and cook: Gently stir all the ingredients together in the slow cooker to combine. Cover with the lid and cook on LOW for 4-5 hours or on HIGH for 3-4 hours until the chicken is cooked through and potatoes are tender.
- Garnish and serve: Once cooked, garnish the dish with fresh chopped parsley and additional parmesan cheese if desired to add fresh color and extra flavor before serving.
Notes
- You can adjust cooking time depending on your slow cooker model; check for chicken doneness and potato tenderness.
- Using Yukon gold potatoes is recommended for their creamy texture, but other waxy potatoes can also be used.
- For a lower sodium version, use low-sodium chicken broth and parmesan garlic sauce.
- This recipe can be doubled for larger gatherings, but cooking time might increase slightly.
- Leftovers can be refrigerated for up to 3 days and reheated thoroughly before serving.
