Description

This authentic Birria recipe slow cooks tender beef chuck roast in a rich, flavorful chili and tomato sauce infused with traditional Mexican spices. Perfect for serving as a stew or in tacos, this comforting dish is full of smoky, savory flavors enhanced by guajillo, ancho, and arbol chilies. The slow cooking process ensures the beef is melt-in-your-mouth tender and packed with deep, complex flavor.

Ingredients

Meat

  • 4 pounds beef chuck roast (cut into 3-inch chunks)

Chilies

  • 10 guajillo chiles
  • 5 ancho chilies
  • 3 arbol chilies

Vegetables

  • 2 Roma tomatoes
  • 1 white onion (quartered)
  • 6 garlic cloves (unpeeled)

Liquids & Spices

  • 2 cups low-sodium beef broth
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon dried Mexican oregano
  • ½ teaspoon ground cloves
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • 3 bay leaves

Optional Garnishes

  • Chopped onion
  • Cilantro
  • Lime wedges

Instructions

  1. Deseed the Chilies: Start by slicing the stems off the guajillo, ancho, and arbol chilies, then shake out all the seeds. Rinse the chilies quickly under cold water to remove any dust or dirt from their surface.
  2. Simmer the Chilies: Place the deseeded chilies in a medium pot and cover them completely with water. Bring the water to a simmer over medium heat and let the chilies soften for about 15 minutes.
  3. Roast the Vegetables: While the chilies simmer, place the Roma tomatoes, quartered onion, and unpeeled garlic cloves on a quarter sheet pan. Broil them in the oven for 4 to 6 minutes until they develop a light char for smoky flavor.
  4. Make the Sauce: Transfer the softened chilies and 1 cup of their cooking water into a high-powered blender. Peel the roasted garlic and add it to the blender along with the charred tomatoes, onion, low-sodium beef broth, apple cider vinegar, kosher salt, black pepper, cumin, Mexican oregano, ground cloves, cinnamon, and ginger. Blend on high for 1 to 2 minutes until the mixture is completely smooth.
  5. Slow Cook the Birria: Place the beef chuck roast chunks into the slow cooker. Pour the blended birria sauce over the meat, add the bay leaves, and gently mix everything with tongs to combine. Cover and cook on low for 8 to 9 hours or on high for 4 to 5 hours until the beef is tender and shreds easily with a fork. If needed, cook longer until shreddable.
  6. Shred the Meat: Remove and discard the bay leaves. Transfer the cooked beef to a cutting board and shred it using two forks until finely pulled apart.
  7. Combine Meat and Sauce: Return the shredded beef to the slow cooker and stir it into the sauce (consommé), allowing the meat to absorb the flavorful liquid.
  8. Serve: Serve the birria hot straight from the slow cooker as a stew or with the consommé in bowls. Garnish with chopped onion, fresh cilantro, and a squeeze of lime juice for an authentic finish.

Notes

  • Deseeding the chilies reduces bitterness and ensures a smooth sauce.
  • Broiling the vegetables adds a smoky depth to the sauce.
  • Use a high-powered blender for a perfectly smooth sauce consistency.
  • Adjust cooking time if beef is not easily shreddable to achieve optimal tenderness.
  • Birria can be served as stew or used as filling for tacos or quesadillas.
  • Garnishes like onion, cilantro, and lime brighten the rich flavors.
