Description

Skewered Salami Eyeballs are a spooky and delicious Halloween appetizer combining mozzarella balls decorated with kalamata olive 'eyes,' slices of pepperoni, and red bell pepper wedges. These easy-to-assemble savory skewers make a fun and festive addition to any party platter.

Ingredients

Eyeballs

  • 1 cup mozzarella balls
  • 2 tablespoons kalamata olives
  • 1 red bell pepper (for decoration)
  • 4 ounces pepperoni stick

Instructions

  1. Cut Mozzarella: Use a sharp knife to make small indents on each mozzarella ball. These indents will hold the olive pieces to create the 'eyes.'
  2. Prepare Eyes: Finely chop the kalamata olives and press them into the mozzarella indents, forming the eyeball pupils.
  3. Slice Pepperoni: Cut the pepperoni stick into small chunks about 3/4 inch (2 cm) long and also into thin slices or strips that are 1/4 to 1/2 inch thick for layering on the skewers.
  4. Cut Red Pepper: Slice the red bell pepper into small wedge-shaped pieces for decoration. Optionally, dried chili peppers can be used for added spice.
  5. Assemble Skewers: Thread the skewers starting with a red pepper wedge, then a pepperoni chunk, followed by a mozzarella ball with the olive eye. Add a thicker pepperoni slice afterward. Near the base, add a few thin pepperoni slices and finish with another mozzarella ball to stabilize the skewer.
  6. Chill and Serve: Refrigerate the assembled skewers until ready to serve. Arrange them on a Halloween-themed platter for a festive presentation.

Notes

  • Use fresh mozzarella balls for the best texture.
  • For a spicier version, substitute red bell pepper wedges with dried chili peppers.
  • Skewers can be prepared a few hours ahead and kept refrigerated.
  • Ensure olives are finely chopped so they fit nicely into the mozzarella indents.
