Description

This Shrimp Linguine recipe features perfectly cooked al dente pasta tossed in a rich brown butter and garlic sauce with tender, succulent shrimp seasoned with garlic and herbs. Finished with fresh lemon juice and parsley, and optionally garnished with parmesan, this dish offers a delightful balance of buttery, savory, and fresh flavors perfect for a quick and elegant dinner.

Ingredients

Pasta

  • 1 box linguine (16-ounce, cooked al dente and drained)

Shrimp and Sauce

  • 6 tablespoons salted butter
  • 2 tablespoons olive oil (or avocado oil or similar)
  • 1 tablespoon garlic, minced
  • 24 ounces shrimp (fresh or thawed, raw, medium, peeled and deveined, tails removed)
  • 1 tablespoon garlic and herb seasoning
  • 5 tablespoons lemon juice (fresh)
  • ¼ cup fresh parsley, minced (plus more for garnish)
  • Parmesan cheese (fresh, optional garnish)

Instructions

  1. Cook linguine: Prepare the linguine according to the package instructions until al dente. Drain and set aside while preparing the shrimp and sauce.
  2. Melt butter: In a large skillet over medium-low heat, melt the butter and cook it gently until it turns golden brown and aromatic, about 2 minutes. This browning adds a nutty depth to the sauce.
  3. Add oil: Stir in the olive oil to the browned butter and mix well to combine.
  4. Sauté garlic: Add the minced garlic to the skillet and sauté for about 1 minute, just until fragrant and golden brown, being careful not to burn it.
  5. Cook shrimp: Incorporate the shrimp and garlic-herb seasoning into the skillet. Cook for 3 to 5 minutes, stirring occasionally, until the shrimp turn light pink and curl up. Avoid overcooking to keep shrimp tender.
  6. Remove shrimp: Using a slotted spoon, transfer the cooked shrimp to a large bowl, leaving the sauce in the skillet.
  7. Add lemon and parsley: To the skillet with the remaining sauce, stir in the fresh lemon juice and minced parsley.
  8. Toss linguine: Add the cooked linguine to the skillet and gently fold everything together to coat the pasta in the sauce evenly. Heat through for about 1 minute.
  9. Combine and serve: Remove the skillet from heat, then stir the shrimp back into the linguine mixture. Garnish with additional fresh parsley and optional parmesan cheese before serving.

Notes

  • Be careful not to overcook the shrimp to keep them tender and juicy.
  • Use fresh lemon juice for the best bright flavor.
  • Substitute olive oil with avocado oil or another neutral oil if preferred.
  • Fresh parsley adds a nice freshness and color – don’t skip it.
  • Parmesan garnish is optional but adds a lovely savory finish.
  • Cooking butter until browned (browned butter) provides a richer flavor than simply melting it.
