Description
A quick and healthy Sheet Pan Salmon Dinner with Broccoli and Carrots, featuring a flavorful Asian-inspired sauce made with soy, sesame oil, and fresh herbs. This easy-to-make recipe requires minimal cleanup and serves as a perfect weeknight meal.
Ingredients
For the Sauce
- 1 tablespoon brown sugar
- 1 teaspoon toasted sesame oil
- ½ cup low-sodium soy sauce or tamari
- 2 tablespoons minced fresh cilantro
- 1 teaspoon minced peeled fresh ginger
- 2 garlic cloves, minced
- 1 tablespoon sesame seeds
Main Ingredients
- 1 (1½-pound) salmon fillet, cut into 4 pieces
- 3 cups broccoli florets
- 4 medium carrots, peeled and cut into 3-inch matchsticks
- 3 green onions, white and green parts, minced (optional)
- 4 cups cooked rice, for serving (optional)
Instructions
- Preheat the Oven: Preheat your oven to 400°F (204°C) and position the rack in the center to ensure even cooking.
- Prepare the Sauce: In a small bowl, whisk together the brown sugar, toasted sesame oil, low-sodium soy sauce or tamari, minced cilantro, grated fresh ginger, minced garlic cloves, and sesame seeds until well combined.
- Arrange Ingredients on Sheet Pan: Lay the salmon pieces, broccoli florets, and carrot matchsticks evenly on a large rimmed sheet pan. Drizzle half of the prepared sauce over the salmon and vegetables and gently toss to coat everything evenly.
- Bake the Dish: Place the sheet pan in the preheated oven and bake for about 12 minutes, or until the salmon flakes easily with a fork and the vegetables are tender. If the vegetables need additional time to become tender, carefully transfer the salmon to a serving platter to rest and continue roasting the vegetables for a few more minutes until desired tenderness is reached.
- Garnish and Serve: Drizzle the remaining sauce over the cooked salmon and vegetables. Sprinkle with the minced green onions if using. Serve warm alongside cooked rice as an optional accompaniment.
Notes
- Use low-sodium soy sauce to control salt levels.
- Ensure salmon pieces are evenly sized for uniform cooking.
- Optional rice side can be substituted with quinoa or cauliflower rice for variation.
- Leftovers keep well refrigerated for up to 2 days.
- For added flavor, marinate the salmon and vegetables in the sauce for 15-30 minutes before baking.
