Ingredients
Protein
- 1.5 lb chicken breast
Vegetables
- 4 cups sweet potatoes (peeled, raw, diced, about 2 medium to large sweet potatoes)
- 2 cups red onion (diced)
- 1 lb broccolini (or broccoli)
Spices and Seasonings
- 1 tsp olive oil (plus spray/oil for roasting)
- 2 tbsp BBQ sauce (e.g., Stubbs)
- 1 tbsp honey
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp coriander
- 1 tsp kosher salt
- 1 tsp brown sugar
Instructions
- Preheat the oven: Set your oven to 425°F to prepare for roasting the chicken and vegetables.
- Prepare sweet potatoes: Peel and dice the sweet potatoes into 1-inch pieces for even roasting.
- Line the sheet pan: Cover a sheet pan with foil or parchment paper and spray it with olive oil to prevent sticking.
- Make the spice mix: Combine paprika, onion powder, garlic powder, coriander, kosher salt, and brown sugar in a bowl.
- Season sweet potatoes: Toss the diced sweet potatoes with olive oil and 1 tablespoon of the spice mixture; save the rest for the chicken.
- Roast sweet potatoes: Spread the sweet potatoes evenly on the sheet pan, spray a little more olive oil on top, and roast for 15 minutes.
- Prep remaining ingredients: While the sweet potatoes roast, dice the red onion, trim and wash the broccolini, and cut the chicken breast into 8 pieces.
- Season chicken: Coat the chicken pieces evenly with the reserved spice mix by massaging it into the meat.
- Add vegetables and chicken: Remove the sheet pan from the oven, shift sweet potatoes to one side, add olive oil spray, then place the red onion, broccolini, and seasoned chicken on the pan. Spray with olive oil and lightly salt the broccolini and onion.
- Roast together: Return the sheet pan to the oven and roast for another 15 minutes, allowing the chicken and vegetables to cook through.
- Mix BBQ glaze: In a small bowl, combine the BBQ sauce and honey until well blended.
- Glaze chicken: Remove the sheet pan from the oven again and brush the BBQ sauce and honey mixture onto the chicken pieces for a flavorful finish.
- Finish roasting: Toss the vegetables gently and return the sheet pan to the oven for an additional 10 minutes to caramelize the glaze and ensure everything is cooked perfectly.
Notes
- You can substitute broccolini with regular broccoli if preferred.
- For a spicier kick, add a pinch of cayenne pepper to the spice mixture.
- If you don’t have BBQ sauce on hand, a mixture of tomato paste, vinegar, and spices can be used as a quick alternative.
- Make sure to evenly spread ingredients on the sheet pan for uniform cooking.
- Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F for food safety.
