Delight in these elegant Rose Truffles, a luscious treat blending creamy white chocolate with fragrant rosewater and the tartness of freeze-dried raspberries. Perfectly dusted with powdered sugar, these truffles offer a delicate floral and fruity bite that melts in your mouth. Ideal for special occasions or as a sophisticated homemade gift, they require just a few simple ingredients and minimal hands-on time.
Ingredients
Truffle Mixture
- 10.5 oz (300 g) white chocolate, chopped into small bits
- 1/4 cup (55 g / 1.9 oz) unsalted butter, at room temperature
- 3 tbsp rosewater
- 1/4 cup (60 g / 2 oz) freeze-dried raspberries
Coating
- 1/2 cup (50 g / 1.8 oz) powdered (confectioners’/icing) sugar for dusting
Instructions
- Crush the raspberries: Using a food processor or blender, pulse the freeze-dried raspberries into fine crumbs, ensuring they are evenly ground to incorporate a consistent raspberry flavor throughout the truffles.
- Melt the chocolate: Place the white chocolate and unsalted butter into a microwave-safe bowl. Heat in the microwave on medium-high power in 30-second intervals, stirring between each interval until the chocolate and butter are fully melted and combined. Take care not to burn the chocolate by stirring frequently.
- Make and chill the mixture: Add the ground freeze-dried raspberries and rosewater to the melted chocolate mixture. Whisk gently until well blended, avoiding incorporating excess air. Cover the bowl tightly with cling film, pressing the film directly onto the surface of the mixture to prevent a skin from forming. Let the mixture come to room temperature before placing it in the refrigerator to chill and firm up for 2 to 3 hours or overnight. If the butter separates, stir it back in until smooth.
- Form the truffles: Using a small cookie scoop or spoon, scoop out approximately 1 tablespoon of the chilled mixture and roll it into a smooth ball between your palms. Roll each truffle in powdered sugar until coated evenly. If the mixture becomes too soft to handle, return it to the refrigerator to firm up again. Arrange the truffles on a lined plate and chill in the refrigerator for another 30 minutes to 1 hour before serving.
Notes
- Ensure the white chocolate and butter are melted carefully to avoid burning and maintain smooth texture.
- Pressing the cling film directly onto the mixture surface helps prevent a crust from forming while chilling.
- If the mixture is too soft to roll, refrigerate it until firm enough to handle.
- These truffles are best enjoyed within 3 days when stored in an airtight container in the refrigerator.
- For an extra touch, sprinkle a small amount of finely chopped freeze-dried raspberries on top of each truffle before serving.
