Description

This Ritz Cracker Chicken Casserole is a creamy, comforting weeknight dinner featuring shredded rotisserie chicken baked in a flavorful sauce and topped with buttery, crunchy crushed Ritz crackers. The combination of cream of chicken soup, sour cream, and seasonings creates a rich and satisfying dish that's easy to prepare and perfect for feeding a crowd.

Ingredients

Chicken Mixture

  • 8 cups packed shredded rotisserie chicken (from 2 whole rotisserie chickens)
  • 2 (10 1/2 ounce) cans cream of chicken soup
  • 1 cup sliced scallions, plus more for garnish
  • 1 (8 ounce) container sour cream
  • 1/2 cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons onion powder
  • 1 1/2 teaspoons freshly ground black pepper
  • 1 1/2 teaspoons kosher salt

Topping

  • 2 sleeves buttery round crackers (such as Ritz®), crushed (about 60 crackers)
  • 1/2 cup unsalted butter, melted

Instructions

  1. Prepare ingredients: Gather all ingredients and preheat your oven to 350 degrees F (175 degrees C) to ensure it's ready once your casserole is assembled.
  2. Mix chicken base: In a 9x13-inch baking dish, combine the shredded rotisserie chicken, cream of chicken soup, sliced scallions, sour cream, chicken broth, Dijon mustard, garlic powder, onion powder, freshly ground black pepper, and kosher salt. Stir everything thoroughly to make an even, creamy mixture spread into the dish.
  3. Prepare topping: In a separate bowl, stir together the crushed Ritz crackers and melted butter until the crackers are evenly coated with butter.
  4. Assemble casserole: Sprinkle the buttery cracker mixture evenly over the chicken base layer in the baking dish.
  5. Bake: Place the casserole in the preheated oven and bake until bubbly and the cracker topping is golden brown, about 30 minutes.
  6. Garnish and serve: Remove the casserole from the oven, garnish with additional sliced scallions as desired, and serve warm.

Notes

  • Using rotisserie chicken saves time and adds extra flavor to the casserole.
  • You can substitute cream of chicken soup with cream of mushroom soup for a slightly different flavor.
  • For a lower sodium option, use reduced-sodium soup and adjust salt accordingly.
  • Make sure to crush the crackers finely but not into powder for the best topping texture.
  • This casserole can be made ahead and baked just before serving.
