Ingredients
Cookies and Filling
- 48 Ritz crackers
- ½ cup creamy peanut butter
- ½ cup marshmallow fluff (optional)
Chocolate Coating
- 5 ounces Ghirardelli milk chocolate melting wafers (about ½ a package)
- 5 ounces Ghirardelli white chocolate melting wafers (about ½ a package)
- Sprinkles (optional)
Instructions
- Prepare Crackers: Place Ritz crackers face down on a parchment-lined baking sheet. Add about a teaspoon of creamy peanut butter to each cracker and spread evenly to create a smooth layer.
- Add Marshmallow Fluff (optional): If using, fill a piping bag with marshmallow fluff and pipe a small dollop, about a teaspoon, onto the center of each cracker on top of the peanut butter.
- Assemble Sandwiches: Top each cracker with a second cracker placed face side up to create a sandwich, sealing in the peanut butter and marshmallow fluff layers.
- Melt Chocolate: In a small microwave-safe bowl, melt the milk chocolate wafers according to package directions, usually in short 20-30 second intervals, stirring until smooth.
- Dip Sandwiches in Chocolate: Dip each cookie sandwich into the melted milk chocolate, use a fork to lift it out, and gently tap the fork against the edge of the bowl to remove excess chocolate. Repeat this process with the white chocolate for some sandwiches or to create a decorative coating.
- Decorate and Set: Place the dipped cookies back onto the parchment-lined baking sheet. Add sprinkles on top, if desired, and allow the chocolate to harden completely before serving, which can take about 30 minutes at room temperature or faster in the refrigerator.
Notes
- You can omit the marshmallow fluff for a simple peanut butter sandwich cookie.
- Use high-quality melting wafers for smoother and shinier chocolate coating.
- Ensure the chocolate is not overheated to avoid burn and grainy texture.
- Store the finished cookies in an airtight container at room temperature or refrigerated to extend freshness.
- Sprinkles add festive appeal but are optional depending on the occasion.
