Perfectly balanced with a touch of lemon juice and garnished with fresh mint and fruit slices, this beverage is a cool, comforting treat ideal for warm weather or any time you crave a sweet, fruity iced tea.
Ingredients
For the Tea
- 6 cups filtered water
- 6 black tea bags (Lipton or Luzianne preferred)
- 2 tablespoons freshly squeezed lemon juice
- Fresh mint leaves & peach/lemon slices, for garnish (optional)
For the Peach Syrup
- 2 large ripe peaches, rinsed, pitted, and cut into slices (no need to peel)
- 2 cups filtered water
- 1 1/2 cups organic cane sugar (or granulated sugar)
Instructions
- Prepare the Tea: In a large saucepan, pot, or kettle, bring 6 cups of filtered water to a rolling boil. Once boiling, remove from heat immediately. Drape the 6 black tea bags over the side of the pot, or if using a kettle, pour the boiling water into a heat-safe vessel like a glass bowl and add the tea bags. Let the tea steep naturally for 20 minutes to extract rich flavors.
- Make the Peach Syrup: While the tea steeps, combine the sliced peaches, 2 cups of filtered water, and 1 1/2 cups of sugar in a saucepan over medium-high heat. Cook for about 15 minutes, stirring occasionally to dissolve the sugar and soften the peaches.
- Mash the Peaches: Use a potato masher to break down the cooked peaches further in the saucepan, releasing more juice and flavor. Remove the pan from heat once well mashed.
- Strain the Peach Mixture: Carefully pour the peach mixture through a fine mesh sieve into a bowl or pitcher. Use a rubber spatula or the back of a spoon to press down firmly on the peach pulp to extract as much syrup as possible. Discard or save the leftover pulp for other uses.
- Assemble the Sweet Tea: Remove the tea bags from the steeped tea without squeezing to avoid bitterness and discard them. In a large pitcher, combine the brewed black tea, freshly squeezed lemon juice, and the prepared peach syrup. Stir thoroughly to blend all components evenly.
- Serve and Garnish: Pour the peach sweet tea over glasses filled with ice. Garnish each serving with fresh mint leaves and slices of peach or lemon for a decorative and flavorful presentation.
- Storage and Serving Tips: Store the tea pitcher in the refrigerator to keep it chilled. Note that separation may occur after resting, so stir the tea well before serving each time to redistribute the flavors evenly. Enjoy chilled for the best refreshing experience.
Notes
- Do not squeeze the tea bags after steeping to avoid bitterness.
- If you want extra peach flavor, save the pulp for smoothies or desserts.
- Use organic cane sugar for a more natural sweetness, but granulated sugar works just as well.
- This tea tastes best when served chilled over plenty of ice.
- Adjust the sweetness by altering the amount of sugar in the peach syrup to your preference.
- Fresh mint and citrus slices are optional but add a lovely aroma and visual appeal.
- Store leftovers in an airtight container in the refrigerator and consume within 3-4 days for best quality.
