Ingredients
Brownie Batter
- 1 cup butter, melted
- 2 cups sugar
- 3/4 cup cocoa powder
- 2 tsp vanilla extract
- 4 eggs
- 1 1/2 cups all-purpose flour
- 1/2 tsp salt
- 3/4 cup creamy peanut butter
- 3/4 cup miniature Reese's peanut butter cups, chopped
Topping
- 2 cups miniature Reese's peanut butter cups, chopped
Instructions
- Prepare Ingredients: Chop the miniature Reese's peanut butter cups and place them in the freezer to keep firm. Preheat the oven to 350°F (175°C).
- Make the Brownie Batter: In a large bowl, whisk together the melted butter, sugar, and cocoa powder until smooth. Add the eggs and vanilla extract; continue whisking until all ingredients are well combined and the batter is smooth. Gently stir in the flour, salt, and about 3/4 cup of the chopped peanut butter cups to incorporate them evenly.
- Assemble the Pan: Grease a 9x13-inch baking pan. Spread the prepared brownie batter evenly into the pan. Drop spoonfuls of the creamy peanut butter across the surface of the batter. Using a butter knife or skewer, swirl the peanut butter through the brownie batter to create a marbled effect.
- First Bake: Place the pan into the preheated oven and bake at 350°F for about 20 minutes. This partially sets the batter and peanut butter swirl.
- Add Topping and Finish Baking: Remove the pan from the oven and sprinkle the remaining chopped Reese's peanut butter cups evenly over the top. Return to the oven and bake for an additional 18-20 minutes, or until a toothpick inserted near the center comes out with just a few moist crumbs.
- Cool and Serve: Allow the brownies to cool completely in the pan on a wire rack. Once cool, cut into 20 squares and serve.
Notes
- For firmer peanut butter cups to swirl and top, freezing them before use is recommended.
- You can substitute chunky peanut butter for a different texture in the swirl.
- Ensure not to overbake to keep the brownies fudgy.
- Store brownies in an airtight container at room temperature for up to 3 days or refrigerate to extend freshness.
- For easier cutting, chill brownies before slicing.
