Description

A quick and delicious raspberry dessert sauce made with fresh or frozen raspberries, sugar, and a touch of lemon juice. This versatile sauce is perfect for drizzling over your favorite desserts like ice cream, pancakes, or cheesecake. The optional vanilla extract adds a richer flavor, and straining removes the seeds for a smooth texture.

Ingredients

Raspberry Sauce Ingredients

  • 1 Tablespoon water
  • 2 teaspoons cornstarch
  • 3 cups (about 12 ounces/375g) fresh or frozen raspberries
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon fresh lemon juice
  • Optional: 1/2 teaspoon vanilla extract

Instructions

  1. Make Cornstarch Mixture: Whisk the cornstarch and water together until the cornstarch is fully dissolved, using a fork or small whisk.
  2. Cook Raspberry Mixture: In a small saucepan over medium heat, combine the cornstarch mixture, raspberries, sugar, and lemon juice. Stir occasionally with a silicone spatula while lightly mashing the raspberries as the mixture heats.
  3. Boil the Sauce: Bring the mixture to a boil and let it boil for 3 minutes, stirring occasionally to prevent sticking and ensure even cooking.
  4. Add Vanilla (optional): Remove the saucepan from heat and stir in the vanilla extract if using, to deepen the flavor.
  5. Strain the Sauce: Press the warm sauce through a fine mesh strainer using the back of a spoon to remove raspberry seeds, resulting in a smooth sauce.
  6. Cool the Sauce: Let the sauce cool completely at room temperature or refrigerate it, so it thickens slightly for drizzling.
  7. Store Properly: Cover and refrigerate the sauce; it will keep well for up to 1 week.

Notes

  • Use fresh or frozen raspberries based on availability.
  • Do not skip the lemon juice as it balances the sweetness and brightens the flavor.
  • Straining is optional but recommended for a seedless, smooth sauce texture.
  • Serve warm over desserts or cooled for a thicker drizzle.
  • Store in an airtight container in the refrigerator for up to one week.
