This Quick & Hearty Ground Beef Burrito Bowl is a flavorful and satisfying meal perfect for a busy weeknight. Featuring seasoned ground beef, fluffy rice, black beans, corn, melted cheddar, and fresh toppings like salsa and cilantro, it delivers a wonderful combination of textures and Mexican-inspired flavors. Ready in just 30 minutes, this bowl packs protein and veggies for a balanced and delicious dinner.

Ingredients

Main Ingredients

  • 1 cup cooked white rice (or brown/cilantro-lime rice) per bowl, hot and fluffy
  • 1/2 cup taco-seasoned ground beef per bowl, juicy and saucy
  • 1/4 cup black beans (canned, rinsed & drained) per bowl
  • 1/4 cup corn (canned drained or frozen thawed) per bowl
  • 1/4 cup cheddar cheese, shredded (freshly grated for best melt) per bowl
  • 2 tbsp salsa or pico de gallo per bowl
  • 1 tbsp fresh cilantro, chopped per bowl

For the Ground Beef

  • 1 lb lean ground beef
  • 1 packet taco seasoning (or approximately 2 tbsp)
  • 1/2 cup water
  • Lime wedges for serving (optional)

Instructions

  1. Cook Your Rice: Cook 1 cup of rice per serving according to the package directions, either on the stovetop or using a rice cooker. Rinse white rice until the water runs clear to remove excess starch. After cooking, add a squeeze of lime and a pinch of salt for enhanced flavor and keep the rice hot and fluffy.
  2. Brown & Season the Beef: Heat a large skillet over medium-high heat. Add 1 lb of lean ground beef, breaking it up as it cooks. Brown the beef thoroughly for 5 to 7 minutes until no longer pink. Drain any excess fat from the skillet. Return the beef to the heat, then sprinkle in the taco seasoning and pour in 1/2 cup water. Stir well and simmer for 3 to 5 minutes until the mixture becomes saucy and glossy. If the mixture looks too dry, add 1 to 2 tablespoons of water to loosen it.
  3. Prep the Toppings: Rinse and drain the canned black beans. Drain or thaw the corn if using frozen. Chop fresh cilantro. For best results, warm the black beans and corn in the microwave for 30 to 60 seconds before serving so they don't cool down the burrito bowl.
  4. Assemble the Burrito Bowl: Spoon the hot cooked rice into each serving bowl. Top with 1/2 cup of the seasoned ground beef, followed by 1/4 cup each of black beans and corn arranged in neat sections. Sprinkle with 1/4 cup shredded cheddar cheese while everything is still warm to allow the cheese to melt. Finish each bowl with 2 tablespoons of salsa or pico de gallo and 1 tablespoon chopped fresh cilantro. Optionally, serve with lime wedges on the side for extra zest.

Notes

  • Use brown rice or cilantro-lime rice as healthy rice alternatives for variety and extra flavor.
  • Freshly grate the cheddar cheese for better melting and creamier texture.
  • Adjust taco seasoning amount to taste or use homemade blends for a healthier option.
  • To make the meal quicker, use pre-cooked rice and warmed canned beans and corn.
  • Leftovers can be refrigerated in airtight containers for up to 3 days and reheated gently.
