Description

Delightfully creamy and festive, these Pumpkin Cheesecake Truffles combine the rich flavors of pumpkin and spiced cheesecake in bite-sized treats. Perfect for holiday gatherings or as a sweet fall indulgence, these no-bake truffles are coated with granulated sugar and topped with chocolate chips to resemble pumpkin stems.

Ingredients

Truffle Mixture

  • 1 tablespoon butter
  • 4 ounces cream cheese, softened at room temperature
  • 1/2 cup canned pumpkin puree
  • 1 (14-ounce) can sweetened condensed milk
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 cup graham cracker crumbs
  • 1/3 cup white chocolate chips
  • Orange food coloring (or red and yellow food colorings), as needed, optional

Coating and Topping

  • Granulated sugar, as needed for rolling
  • Chocolate chips, for topping

Instructions

  1. Combine Ingredients: In a skillet over medium heat, combine the butter, softened cream cheese, canned pumpkin puree, sweetened condensed milk, and pumpkin pie spice. Stir constantly until the mixture thickens and becomes well-combined.
  2. Add Dry Ingredients and Melt Chocolate: Stir in the graham cracker crumbs and white chocolate chips. Continue stirring until the white chocolate chips have melted completely and the mixture is smooth. Add a few drops of orange food coloring if desired to enhance the truffle color.
  3. Cook Until Thickened: Keep stirring until the pumpkin cheesecake mixture releases from the sides and bottom of the pan, which ensures it is thick enough. If uncertain, cook a little longer for a thicker consistency rather than too thin.
  4. Chill the Mixture: Pour the thickened mixture onto a butter-greased baking sheet. Spread it evenly and refrigerate for about 2 hours or preferably overnight until firm.
  5. Form Truffle Balls: Rub a little butter on your hands to prevent sticking. Roll the chilled pumpkin cheesecake dough into small bite-sized balls.
  6. Coat with Sugar: Pour granulated sugar into a shallow bowl and roll each ball in the sugar to coat evenly.
  7. Create Pumpkin Details: Using a toothpick, lightly press ridges along the sides of each truffle to mimic the grooves of a pumpkin. Top each truffle with a chocolate chip to resemble a pumpkin stem.
  8. Serve or Store: Serve the truffles immediately or refrigerate until ready to serve to keep them firm and fresh.

Notes

  • Ensure the mixture is thick enough before chilling to help the truffles hold their shape better.
  • The optional orange food coloring enhances the pumpkin-like appearance but can be omitted if preferred.
  • For a gluten-free version, substitute graham cracker crumbs with gluten-free graham crackers or crushed nuts.
  • Store truffles in an airtight container in the refrigerator; they keep well for up to 3 days.
