Ingredients
Soup Ingredients
- 2 tablespoons olive oil, divided
- 8 ounces shiitake mushrooms, thinly sliced
- 2 tablespoons grated or minced fresh ginger
- 4 cloves garlic, pressed or minced
- 6 cups vegetable broth
- 2 tablespoons soy sauce
- 16 to 20 ounces frozen potstickers
- 5 scallions, thinly sliced and divided
- 3 baby bok choy, ends trimmed off and leaves separated
- 2 teaspoons toasted sesame oil
- Freshly-ground black pepper, to taste
- Optional toppings: chili crisp, toasted sesame seeds, furikake seasoning, fried garlic
Instructions
- Sauté mushrooms: Heat 1 tablespoon of olive oil in a large stockpot over medium-high heat. Add the thinly sliced shiitake mushrooms and sauté, stirring occasionally, until they are browned and tender.
- Add aromatics: Pour in the remaining tablespoon of olive oil along with the minced garlic and grated ginger. Continue to sauté for 1 to 2 minutes, stirring occasionally, until the mixture becomes fragrant.
- Simmer broth: Add the 6 cups of vegetable broth and 2 tablespoons of soy sauce to the pot. Stir well and bring the broth to a boil over medium-high heat.
- Cook potstickers and vegetables: Once boiling, add the frozen potstickers, half of the sliced scallions, and separated bok choy leaves. Stir gently and cook for 3 to 4 minutes until the potstickers are heated through and cooked. Stir in 2 teaspoons of toasted sesame oil and season with freshly-ground black pepper to your liking. Taste and adjust seasoning with more soy sauce or pepper if desired.
- Serve: Ladle the soup into bowls and garnish generously with the remaining scallions and any optional toppings such as chili crisp, toasted sesame seeds, furikake seasoning, or fried garlic for added texture and flavor. Serve immediately while hot.

- Frozen potstickers cook quickly in hot broth, so do not overcook to avoid them breaking apart.
- Adjust soy sauce for saltiness according to your preference.
- Optional toppings add extra flavor and crunch—experiment with different combinations.
- This soup is best enjoyed fresh but can be refrigerated for up to 2 days. Reheat gently on stovetop.
