Description

These Pop Tart Cookies combine the nostalgic flavors of Pop Tarts with a soft, buttery cookie base. Featuring chunks of Pop Tarts mixed into the dough and pressed on top, these cookies are baked until lightly golden and finished with a colorful drizzle of sweet icing and sprinkles. Perfect for a fun dessert or an indulgent snack that adds a whimsical twist to classic cookies.

Ingredients

Cookie Dough

  • 3/4 cup butter, softened
  • 2 ounces cream cheese
  • 1 cup sugar
  • 1 tablespoon corn syrup
  • 1 egg
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 6 Pop Tarts, coarsely chopped

Topping

  • 2 Pop Tarts, chopped for pressing on top

Icing (Optional)

  • 1 cup powdered sugar
  • 1 1/2 tablespoons water
  • Food coloring, optional
  • Sprinkles, optional

Instructions

  1. Preheat Oven. Set your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper to prevent sticking and for even baking.
  2. Cream Butter and Cream Cheese. In the bowl of a stand mixer, beat the softened butter and cream cheese together until the mixture is smooth and creamy, ensuring no lumps remain.
  3. Add Sugar and Corn Syrup. Incorporate the sugar and corn syrup into the butter-cream cheese mixture. Beat until the mixture becomes light and fluffy, which helps create airiness in your cookie dough.
  4. Mix in Egg. Add the egg to the batter and mix until fully combined, which helps bind all ingredients together.
  5. Add Dry Ingredients. Gradually stir in the flour, baking soda, and salt until just combined to form the dough, being careful not to overmix to maintain a tender texture.
  6. Fold in Chopped Pop Tarts. Coarsely chop 6 of the Pop Tarts and gently fold them into the cookie dough, distributing the fruity flavor throughout.
  7. Shape Cookies. Scoop portions of the dough onto the prepared baking sheet. Using your palm, press down each mound to about ½ inch thick to help them bake evenly.
  8. Press Pop Tart Chunks on Top. Chop the remaining 2 Pop Tarts and press the pieces onto the tops of each cookie dough mound to create a decorative and flavorful topping.
  9. Bake Cookies. Place cookies in the preheated oven and bake for 10-12 minutes until the edges are just barely golden. The cookies will be soft when taken out but will firm as they cool.
  10. Prepare Icing (Optional). While cookies cool, stir together powdered sugar and water until smooth. Add food coloring if desired to create a colorful glaze.
  11. Drizzle Icing. Drizzle the icing over the cooled cookies using a spoon or piping bag, then sprinkle with decorative sprinkles if desired for an extra festive touch.

Notes

  • Ensure butter and cream cheese are softened to room temperature for easy mixing.
  • Use your favorite flavored Pop Tarts for unique variations.
  • Do not overbake the cookies; they should remain soft and chewy after cooling.
  • The icing is optional but adds a sweet finishing touch and visual appeal.
  • Store cookies in an airtight container to keep them fresh for up to 3 days.
