Description

These Pizza Pot Pies are a fun and delicious twist on traditional pizza, featuring a flaky biscuit crust filled with gooey mozzarella cheese, savory pepperoni, and flavorful pizza sauce. Perfect as a snack or appetizer, these individual pot pies bake up golden and crispy in under 45 minutes, making them a quick and satisfying treat for any occasion.

Ingredients

For the Butter Mixture

  • 1 tablespoon Butter (softened, not melted)
  • ½ tablespoon Olive Oil
  • ¼ teaspoon Salt
  • ¼ teaspoon Garlic Powder
  • ¼ teaspoon Italian Seasoning (plus extra for topping, optional)
  • Pinch of Black Pepper

Main Ingredients

  • Cooking Spray or oil to grease the tins
  • 8 Refrigerated Biscuits (16 ounce package)
  • ¼ cup Pasta Sauce or Pizza Sauce (use a meatless variety)
  • 3 ounces Pepperoni (chopped)
  • 7-8 ounces Shredded Mozzarella Cheese

Instructions

  1. Gather Equipment: You will need 8 muffin cups (3½ inch round tin foil muffin cups with ½ cup capacity) or a standard muffin tin for baking.
  2. Prepare Butter Mixture: In a small bowl, combine the softened butter, olive oil, salt, garlic powder, Italian seasoning, and black pepper. Stir well until fully mixed.
  3. Preheat Oven and Prepare Tins: Preheat your oven to 350°F (175°C). Lightly spray or oil the muffin pan or foil cups, then gently dab with a paper towel to remove excess oil and avoid pooling.
  4. Form Biscuit Crusts: Separate the refrigerated biscuits and place each in a muffin cup. Press gently to mold the biscuit on the bottom and sides, working it until it fits securely and bounces back without shrinking.
  5. Prick Biscuit Dough: Use a fork to prick the biscuit bottoms and sides a few times to prevent puffing excessively during baking.
  6. Brush with Butter Mixture: Lightly brush the inside of each biscuit crust with the prepared butter mixture.
  7. Add Sauce: Brush about ½ heaping teaspoon of pasta or pizza sauce inside each crust.
  8. Layer Cheese and Pepperoni: Add 1 heaping tablespoon of shredded mozzarella cheese, followed by ½ heaping tablespoon of chopped pepperoni. Repeat the layer with another tablespoon of mozzarella and ½ tablespoon of pepperoni.
  9. Sprinkle Seasoning: Optionally, sprinkle a pinch of Italian seasoning on top for extra flavor.
  10. Prepare for Baking: If using foil cups, place them on a sheet pan for stability to prevent spills and to make handling easier.
  11. Bake: Bake in the preheated oven for 20-23 minutes, or until the biscuit edges are golden brown and the cheese is melted and bubbly.
  12. Serve: Carefully lift the pizza pot pies out of the muffin pan or foil cups and arrange on a plate or serve in the tins as desired. Enjoy warm.

Notes

  • Use a meatless pasta or pizza sauce to keep the recipe vegetarian if desired.
  • Make sure the butter used in the butter mixture is softened but not melted for easy blending.
  • Pricking the biscuit dough prevents it from puffing too much and helps it bake evenly.
  • If using foil muffin cups, always place them on a baking sheet for support during baking.
  • Feel free to customize fillings with other toppings like mushrooms, olives, or bell peppers for variety.
