Finished with a smooth white chocolate glaze, these elegant mini desserts are perfect for special occasions or as a sophisticated treat.

Ingredients

Pistachio Sponge Base

  • 2 large eggs
  • ⅓ cup granulated sugar (70 g)
  • ¼ cup pistachio flour (25 g, finely ground pistachios)
  • ¼ cup all-purpose flour (30 g)
  • ½ teaspoon baking powder (2 g)
  • 1 tablespoon milk (15 ml)

Raspberry Gelée

  • ½ cup raspberries (70 g fresh or frozen)
  • 1 tablespoon granulated sugar (12 g)
  • ½ teaspoon lemon juice (2.5 ml)
  • 1 teaspoon powdered gelatin (3 g)
  • 1 tablespoon cold water (15 ml)

Cheesecake Filling

  • 8 oz cream cheese (225 g, softened)
  • ⅓ cup powdered sugar (40 g)
  • ⅓ cup pistachio paste or spread (80 g)
  • ½ teaspoon vanilla extract (2.5 ml)
  • 1½ teaspoons powdered gelatin (4.5 g)
  • 2 tablespoons cold water (30 ml)
  • ½ cup heavy cream (120 ml, cold)

White Chocolate Glaze

  • 4 oz white chocolate (115 g, finely chopped)
  • ¼ cup heavy cream (60 ml)
  • ½ teaspoon neutral oil (2.5 ml, optional, for shine)
  • Green food coloring (optional)

Garnish (optional)

  • Crushed pistachios
  • Freeze-dried raspberries

Instructions

  1. Bloom Gelatin for Raspberry Gelée: Sprinkle 1 teaspoon powdered gelatin over 1 tablespoon cold water in a small bowl and let it sit for 5 minutes to bloom.
  2. Prepare Raspberry Gelée: In a small saucepan over medium heat, combine raspberries, 1 tablespoon granulated sugar, and ½ teaspoon lemon juice. Cook until berries soften and break down, about 2–3 minutes. Remove from heat and stir in the bloomed gelatin until fully dissolved.
  3. Freeze Raspberry Gelée: Spoon the raspberry mixture into small dome molds or a silicone ice cube tray, then freeze until solid, about 1 hour.
  4. Prepare Pistachio Sponge: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Beat eggs and ⅓ cup granulated sugar in a mixing bowl until pale and fluffy, about 3–4 minutes.
  5. Mix Dry Ingredients: Sift together pistachio flour, all-purpose flour, and baking powder, then gently fold into the egg mixture.
  6. Finish Batter & Bake: Stir in 1 tablespoon milk, spread batter into a thin, even layer on the prepared baking sheet, and bake for 10–12 minutes until lightly golden.
  7. Cool & Cut Sponge Circles: Let the sponge cool completely, then cut out circles slightly smaller than your dome molds.
  8. Bloom Gelatin for Cheesecake Filling: Sprinkle 1½ teaspoons powdered gelatin over 2 tablespoons cold water in a small bowl and let it bloom for 5 minutes.
  9. Prepare Cheesecake Mixture: In a bowl, beat cream cheese, powdered sugar, pistachio paste, and vanilla extract until smooth.
  10. Whip Cream & Melt Gelatin: In a separate bowl, whip ½ cup cold heavy cream to soft peaks. Warm the bloomed gelatin gently in the microwave for 5–10 seconds until melted.
  11. Combine Gelatin & Cream Cheese Mixture: Stir the melted gelatin into the cream cheese mixture, then gently fold in the whipped cream until smooth and creamy.
  12. Assemble Cheesecake Domes: Spoon cheesecake filling halfway into dome molds, press a frozen raspberry gelée insert into each, then add more cheesecake filling, leaving space for the sponge.
  13. Top with Sponge Circles & Freeze: Place a pistachio sponge circle gently on top of each mold, then freeze for at least 4–6 hours or overnight until firm.
  14. Prepare White Chocolate Glaze: Heat ¼ cup heavy cream in a small saucepan until it begins to simmer, then pour over chopped white chocolate. Let sit 1 minute, then stir until smooth. Stir in neutral oil and green food coloring if using. Let glaze cool until slightly thickened but still pourable.
  15. Glaze the Cheesecake Domes: Unmold frozen domes and place on a wire rack over a baking sheet. Pour glaze evenly over each dome, allowing excess to drip off.
  16. Garnish & Chill: Garnish with crushed pistachios or freeze-dried raspberries if desired. Chill the glazed domes in the fridge for about 1 hour before serving.

Notes

  • Ensure gelatin is fully bloomed and dissolved for a smooth texture in both the gelée and cheesecake filling.
  • Use silicone dome molds or small silicone ice cube trays for easy unmolding.
  • The pistachio sponge should be thin and baked until just golden for a delicate base.
  • Freeze each component thoroughly to maintain distinct layers and shapes.
  • The white chocolate glaze can be colored for a festive look using gel or liquid food coloring.
  • Store finished domes in the refrigerator and consume within 2-3 days for best freshness.
