Ingredients
Chicken and Vegetables
- 3 boneless skinless chicken breasts, cut into 1 inch pieces
- 2 tsp vegetable oil
- 1/2 tsp salt
- 1 tsp pepper
- 1 red bell pepper, cut into 1 inch pieces
- 1 cup pineapple chunks (fresh or canned)
- 2 green onions, sliced
Sauce
- 1 Tbsp minced garlic
- 1/2 tsp ground ginger
- 1/2 cup pineapple juice
- 1/3 cup soy sauce
- 1/3 cup chicken broth
- 1/4 cup hoisin sauce
- 1/4 cup brown sugar
- 2 tsp cornstarch
- 1 Tbsp sesame seeds
Instructions
- Heat the Oil and Cook Chicken: Heat 2 teaspoons of vegetable oil in a large skillet over medium heat. Add the chicken breast pieces and season them evenly with 1/2 teaspoon salt and 1 teaspoon pepper. Stir occasionally as you cook the chicken for 4-6 minutes until fully cooked through and lightly browned.
- Add Vegetables and Pineapple: To the skillet with the cooked chicken, add the cut red bell pepper and pineapple chunks. Continue cooking everything together for another 3-5 minutes until the bell pepper softens and the pineapple is warmed through.
- Prepare the Sauce: In a small bowl, whisk together pineapple juice, soy sauce, chicken broth, hoisin sauce, brown sugar, minced garlic, ground ginger, and cornstarch until well combined and smooth.
- Simmer the Sauce in Skillet: Pour the sauce mixture into the skillet over the chicken and vegetables. Bring to a gentle simmer and cook for 1-2 minutes, stirring occasionally, until the sauce thickens to your liking. Remove the skillet from heat once thickened.
- Finish and Serve: Sprinkle the cooked dish with sesame seeds and sliced green onions for garnish. Serve immediately and enjoy this sweet and savory pineapple chicken!
Notes
- You can use fresh or canned pineapple chunks based on availability; fresh will give a brighter flavor.
- Adjust the brown sugar quantity if you prefer a less sweet sauce.
- Serve over steamed rice or noodles for a complete meal.
- For extra heat, add a pinch of red chili flakes or a diced fresh chili along with the garlic.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
