Ingredients
Brownie Base
- 1 (18 oz) box brownie mix (prepared according to box instructions)
- 4 oz softened cream cheese
Pecan Pie Filling
- 1/2 cup brown sugar
- 1/3 cup light corn syrup
- 3 tbsp butter
- 1 egg
- 1 tsp vanilla extract
- 1 1/2 cups pecan pieces (divided)
Chocolate Coating
- 2 cups semi-sweet chocolate chips
- 2 tbsp vegetable oil
- Chopped pecans (for topping, from remaining 1/4 cup pecans)
Instructions
- Prepare Brownies: Make the boxed brownie mix as directed on the package, then allow it to cool completely.
- Make Pecan Pie Filling: In a medium saucepan over medium heat, combine brown sugar, corn syrup, butter, egg, and vanilla extract. Bring mixture to a boil, stirring continuously, and boil for 1 minute. Stir in 1 1/4 cups pecan pieces then set aside to cool completely.
- Prepare Brownie Mixture: Trim any hard edges from the cooled brownies and discard or save. Crumble the remaining brownie into a bowl and add the softened cream cheese.
- Mix Brownie Batter: Using an electric mixer, blend the brownie and cream cheese until smooth and no cream cheese lumps remain.
- Form Brownie Balls: Line a baking sheet with parchment paper or a silicone mat. Roll the brownie batter into 1.5-inch balls and place on the prepared sheet.
- Stuff Brownie Balls: Flatten each brownie ball and spoon about 1 teaspoon of the cooled pecan filling into the center. Wrap the brownie dough around the filling to seal and place back on the baking sheet.
- Melt Chocolate Coating: In a microwave-safe bowl, combine chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring between until smooth and melted.
- Coat Brownie Bites: Dip each stuffed brownie ball into the melted chocolate to coat fully, letting any excess drip off, then return to the baking sheet.
- Finish and Chill: Immediately top each chocolate-coated brownie ball with chopped pecans. Refrigerate until the chocolate sets, about 30 minutes, before serving.
Notes
- Use light corn syrup for the classic pecan pie flavor and texture.
- Ensure the pecan pie filling is completely cooled before stuffing to prevent melting the brownie mixture.
- For easier rolling and sealing, chill the brownie batter slightly if it becomes too sticky to handle.
- Store finished brownie bites in the refrigerator in an airtight container for up to 5 days.
- If preferred, substitute semi-sweet chocolate chips with dark or milk chocolate for varied flavor.
