Description

Peanut Butter Pinwheel Candy is a delightful, no-bake treat featuring a unique dough made from mashed potatoes and powdered sugar, rolled out and filled with creamy peanut butter. These bite-sized pinwheels are sweet, rich, and perfectly portioned for sharing, making them an ideal candy for parties or holiday gatherings.

Ingredients

Dough Ingredients

  • ⅓ cup mashed potatoes (about 1 large russet potato)
  • ½ cup unsalted butter, softened
  • 2 teaspoons vanilla extract
  • 1 pinch salt
  • 6-7 cups powdered sugar (plus additional for dusting)

Filling

  • Creamy peanut butter (for filling, amount as needed for spreading)

Instructions

  1. Boil: Peel, dice, and boil the potato until tender, about 10-12 minutes. Drain and then mash well using a potato ricer for best results. Allow the potatoes to cool completely at room temperature before proceeding.
  2. Beat: In a large bowl, use a hand mixer to beat together the cooled mashed potatoes, softened butter, vanilla extract, salt, and 1 cup of powdered sugar until smooth.
  3. Mix: Gradually add the remaining powdered sugar, 1 cup at a time, mixing until the dough is firm and moldable. You may need between 6 to 7 cups total depending on humidity and potato moisture. The dough should be able to roll into a ball without sticking.
  4. Chill: Cover the dough with plastic wrap and refrigerate for 1 hour to firm up the texture and make it easier to handle.
  5. Roll: After chilling, divide the dough into two equal parts. Wrap one piece in plastic wrap and return it to the fridge. Lightly dust a clean surface with powdered sugar and roll out the other dough portion into a rectangle about 1/4 inch thick. Dust the dough and rolling pin as needed to prevent sticking.
  6. Spread: Evenly spread creamy peanut butter over the rolled-out dough, leaving a small border around the edges to prevent overflow when rolling.
  7. Roll: Starting at the longer edge, carefully roll the dough into a tight log shape, ensuring an even spiral.
  8. Slice: Using a sharp knife, cut the log into 1/2-inch thick pinwheel slices. Repeat the rolling, spreading, and slicing process with the remaining dough portion.
  9. Serve: Arrange pinwheels on a serving platter. Optionally dust with powdered sugar for extra sweetness and presentation. Serve immediately or store in an airtight container.

Notes

  • Ensure the mashed potatoes are completely cooled before mixing to prevent melting the butter and sugar.
  • Adjust powdered sugar quantity to achieve a firm but pliable dough; humidity can affect the amount needed.
  • Use creamy peanut butter for smooth spreading; crunchy peanut butter may disrupt rolling.
  • Pinwheels can be stored in the refrigerator for up to 5 days in an airtight container.
  • For easier slicing, chill the rolled logs briefly before cutting.
